My Favourite Sugar Cookies

2 cups flour
1/2 tsp. salt
2 tsp.baking powder
2/3 c. butter/marg
2/3 c. sugar
2 eggs
1 tsp. vanilla

mix flour, salt and baking powder. Cream butter and sugar together. Add eggs one at a time and beat. Add dry ingredients and vanilla. Chill. Roll and cut with a cookie cutter, or form into small balls and press down with a lightly floured fork or glass.
Bake on greased cookie sheet at 350 for 10 to 12 min.

shiny star biscuits

2oz soft brown sugar
2 zp butter, softened
half a small beaten egg
4 1/2 pz plain flour
1/2 oz cornflour
1tsp ground mixed spice
solid boiled sweets
large sta shaped cutter

Mix sugar and butter, getting rid of lumps.
Mix in the beaten egg
sift flour, cornflour and spice into bowl, mix together then squeeze mixture with hands until you make firm dough.
Roll out until slightly thinner than little finger.
cut out star shape
cut out a hole in the middle with a different cutter.
Put stars on making tray, drop a boiled sweet into the hole in the middle.
Bake for 12 mins on gas 4

(sweet will melt making 'stained glass' effect in middle of biscuit.) You can make a hole in the top first with a straw so that you can thread a ribbon through and hang from the tree. My friend did this with her reception class and it worked brilliantly!

zarabootoo · 19/12/2006 18:46

This is a good one. Very festive. nigella's

Mud · 19/12/2006 18:54

you cant do buiscuits with boiled sweets in them for nursery children - why would you add so much crap and e numbers - thats a terible idea and would make me realy cross

SherlockLGJ · 19/12/2006 18:57

Mud

The sweets are for the stain glass effect. Not for eating.

gingerbread biscuits great for all sizes and shapes of cookie cutters. Particularly at Christmas. Stars/Trees/Reindeer whatever you have and you can limit the amount of sugar you put in. Gingerbread recipes

Cool, a thread about biscuits kicking off....I love mumsnet [fgrin}

KTreePee · 19/12/2006 20:10

Actually the first time I saw those stained glass effect biscuits it ws at my ds's nursery! - I think they look great and tbh it wouldn't bother me if my kids ate them. All things in moderation, etc... Pity Cod isn't here - she would have a field day with this!

starshaker · 19/12/2006 20:34

sorry should have made it clear we making them for the teachers instead of a box of chocs. the kids are getting fairy cakes

OK, here's the BEST cookie EVER:

White Chocolate-Cherry Biscotti

Preheat oven at 160° C (325°F)
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Cost: Economical
Difficulty: Very Easy
Makes 26 biscottis
2 cups flour
1 1/2 tsp. Baking Powder
1/2 cup butter or margarine, softened
1/2 cup sugar
2 eggs
1 tsp. vanilla
2 pkg. (6 sq. each) Baker's White
Chocolate, chopped and divided (I used a big milky bar)
1/2 cup sweetened dried cherries (or for a more christmassy cookie use dried cranberries)
1/2 cup chopped pecans (optional)
Method

  1. Preheat oven to 325°F.
  2. Lightly grease and flour large baking sheet, Mix flour and baking powder in medium bowl; set aside.
  3. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well.
  4. Gradually add flour mixture, beating until well blended after each addition. Stir in 1 1/2 cups of the chopped chocolate, cherries and pecans.
  5. Roll dough to 1/4-in. thick on floured surface. Cut with cookie cutters, re-rolling dough scraps as needed.
  6. Place cookies, 2 in. apart, on prepared baking sheet.
  7. Bake for 10-12 min, or until lightly browned.
  8. Turn cookies over on baking sheet. Bake an additional 10-12 min. or until slightly dry and golden brown. Remove to wire racks; cool completely.
  9. Melt remaining chopped chocolate (microwave or bain-marie). Drizzle over cookies. Let stand until chocolate is firm.

biscuit fight biscuit fight...
The easiest of them all is the 321 recipe:

300g flour
200g butter
100g sugar

mix with a little liquid (orange juice is nice, or water), squash, cut into shapes, bake.

Add spices/choc drops/boiled sweet centres etc if you wish. Ice or decorate with melted choc etc if you want. So easy. I do this recipe almost every time my DDs have friends over and never fails to get compliments and plenty of fun
