Hello! I'm looking for ideas for something relatively stress free for a large amount of people. At this same family event last year I did that Jamie Oliver Bread and Butter pudding where you squidge panettone into a dish, dot with chunks of dark chocolate and blobs of orange marmalade, pour custard over and bake sprinkled with Demerara. Something similar to this, that can be baked in a couple of big dishes would be great!

Eton Mess or Cranachan is a good shout actually. There's someone else there who considers themselves to be the Queen of Sticky Toffee so I'm not even going there!

Brownies and ice cream! Cannot go wrong with that surely :-) I will have a look at some recipes.. Something a bit different would be nice.

I would do a dessert that you can pre-make and put in separate glasses so you have one for each person without being left short (tip from Masterchef)
You could make any of these;
Mini cheesecakes
Creme Brulee
Chocolate mousse
Apple Crumble

I like the idea of the glasses but there are some kids, some fussies and a bit of coming and going... It's perhaps a bit hectic for me to do the right number. :-(

I also did a tiramisu last year but I was actually considering a trifle! Will have a look at that nigella one.

Lemon posset.

Get some plastic cups and clear some space in your fridge.

This makes 6 but I have put on a supperclub for 28ish people before and trebled it or whatever and it's easy and delicious.

600ml/1 pint 1fl oz double cream
150g/5oz caster sugar
2 large lemons, zest and juice only

Use a potato slicer to take strips off the lemon, in the pan and bash a bit (with heat on medium) to release oils (can also add a couple of twigs of rosemary here for a dusky note Wink) then pour the cream in and sugar and bring to the boil for a little bit (2/3 mins) then take off the heat and let it infuse - an hour or two is fine. When it's cooled, add the lemon juice. Take out the zest and rosemary, if using.

Then decant into glasses - I normally use little tumblers - put in the fridge for at least 4 hours, preferably overnight, then can be decorated with a bit of cream/meringue/shortbread/a flower or two?

Lush, easy and you don't have to think about anything last minute - they're just their to take out of the fridge in their individual portions ...

Nigella stick toffee pudding is very very easy to make, as is her chocolate self saucing pudding.

Foodie has the best answer Grin I use the James Martin recipe for lemon posset and it's the same I think...

Easy prep ahead dessert, people will think you spent hours making it.

I put in tiny coffee cups I have inherited

Dessert for 30+!

These look lovely, I would make jut over half of each lemon posset and self saucing chocolate puddings. I bet the chocolate puddings would keep in the fridge until you needed them.

Tbh I'm going to give the chocolate puddings a try and keep three in the fridge for another time and see if it works as well if you make in advance.
