What's your favourite vegetarian meal?

We've got a vegetarian friend coming for dinner next week. I usually make a butternut squash risotto but did that last time and think I need to extend my repertoire.

Only caveat is no mushrooms.

Oh, and this is time consuming and makes the flat stink of frying but it is DIVINE!

Serve with rice and lots of fresh cucumber/tomato/onion/coriander salad.

Veggie lasagne is great - make a big tomato and veg sauce (or add vegi mince for added oomf.) If you make a big batch you can freeze some for another meal. Or make 2 lasagnes and freeze one.

Layer up just as you would normal lasagne with white sauce, pasta, veg sauce. A layer of cottage cheese makes it really lush. Grated cheddar on top, and bake.

Serve with a big crisp green salad and maybe garlic bread.

Veggie enchiladas. I've made it for 4 veggie friends and all of them raved about it.

Red/yellow/orange peppers
Onions
Mushrooms
Kidney beans/mixed salad beans
Beansprouts
Can chopped tomatoes

Carton of tomato passata mixed with chilli powder (to taste) or one of those chilli con carne powder mixes. Large handful of grated cheese.

Cook half the chilli mix with the veggies, let cool

Use tortilla wraps with the mixture rolled and tightly packed into a roasting time. Pour the rest of the chilli mix over the top and another handful of cheese. Bake in the oven for 30 mins.

Bloody gorgeous and the beans/pulses make it kind of 'meaty' for non veggies.

Those suggestions are pretty bland for blue cheese substitutes. Some Stiltons are vegetarian, and so is Blacksticks Blue and Cornish Blue.

Some of the above suggestions are a bit "everyday".

I really rate this website for easy vegetarian recipes.

Following as I'm wanting to go a bit more meat free. I love love love halloumi & usually make a couscous with red onion, coriander, lime, chickpeas & tomatoes.

My fave thing to eat would probably be a mezze of salads-spicy green lentils, coleslaw/Napa slaw, roasted peppers, olives, mixed leaves, rocket & parmesan, pesto, hummus, breads with toasted sesame seeds. That or a noodle dish like a wagamamas dish. Writing this is making me hungry...

We are mostly veggie (occasionally eat fish) and one of our favourite family means this winter is potato gratin/gratin dauphinois made really well with lots of butter, cream, salt and black pepper and garlic, a bit of fresh spinach layered through, cheese on top and maybe a few sprigs of rosemary/thyme; served with French beans and salad - or whatever you like.

It's a bit cliched, but I absolutely love quiche and find guests really love it too. Served with broccoli, roast spuds, salad. Yum!
My special quiche tricks are adding cream to the egg, a thin layer of cheese on the pastry before topping it and a thick layer after; and - don't miss this one - lining the quiche dish with pastry then freezing it an hour or two before filling and baking. Then you get everything going in ready (cheese grated, eggs and cream whisked, spinach blanched or courgette fried etc), then quickly assemble and get it in the oven while the pastry is still quite frozen. That way, you end up with perfectly even, crisp pastry - not overdone around the top from blind baking, or soggy bottomed from the egg soaking into raw pastry.

Good tips breakfast. I'm on day 1 of low fat so tho it sounds delicious it will be some time til I can try it!

Made a spicy green lentil salad last night-was yum. First but not last time with green lentils :)

I'm vegetarian my fave tea at the moment is halloumi burger- slices of roasted red pepper and halloumi in a soft bap with rocket and onion chutney.

This pie is gorgeous. In the name it says squash but recipe says sweet potato. I used butternut squash. Put extra coconut milk instead of stock. Served it to my family (all meat eaters) with roast baby potatoes and a side salad and it went down great.
Had people over for dinner Monday and made www.jamieoliver.com/recipes/vegetables-recipes/veggie-chilli/. Yum. Love anything with lots of sides. Served this with brown rice, homemade tomato salsa, homemade guacamole, grated cheese, natural yogurt and tortilla chips. Yum.
On night shift and reading this is making me so hungry.

Dahl Makhni (sp) is lovely, a mild, creamy black lentil dish. Black-eye beans and mushrooms from Madhur Jaffrey is good and easy too. In fact going down the Indian route is usually a good solution to vegetarian meals.

I also love a good halloumi burger, especially with a bit of added guacamole! Plus it's really quick and easy to make. Just slice up some halloumi and lightly fry in some oil for about 5 minutes and then serve in burger buns with the usual burger side dishes.

Another idea is a nice tofu noodle stir-fry in a peanut sauce (again really easy and quick to make). Just fry tofu for 5 minutes then add the noodles / vegetables and sauce, then fry for another 5 minutes. All done!

A beany chilli, sometimes with butternut squash. With lots of lime, coriander and cheese, I prefer it to a meaty one.

Unfortunately, our friend is no longer coming for dinner as I became unwell. But I now have a good list for when we have vegetarian friends over again - or just for nice meals for us to cut down on meat!

Dp likes deliah smith broccoli soufflé, its a bit different and I serve with bakebeans. For someone coming for supper I would be inclund to do potato pie
