FUDGE MAKERS - where do I get.....

dried cranberries for eidsvold's white choc fudge?

I've tried Tesco's, Sainsbury's and Asda - no luck, the girl in Asda looked at me as though I'd asked for Reindeer droppings!

and what is the difference between evaporated milk and condensed milk?

I've made it anyway but the cranberries will bulk it out a bit for dd's teacher's!

you can buy dried cranberries in morrisons they are where the baking things are(with the dried fruit) condensed milk is a lot thicker (and more expansive) then evaporated milk, i use evap rather then condensed when i make caramel and i normally boil it for longer and its ok, but i dont know how it will turn out for fudge, let me know i'm making fudge next week for xmas presents.

thanks I hadn't thought of Morrisons, the condensed milk was fab straight out of the tin!! I might try evap the next time as it was a quarter of the price.

It looks gorgeous and dd has licked the spoon clean so it must be ok.

This might be a daft question (but in my defence I'm no Delia ) -can you use fresh cranberries as thats what I've just gone out and bought for the fudge recipe???

otherwise try cake decorating shops (if you have any local) they normally have nice little gold boxes or even in some of the card shops.

they might be a little too juicy IYKWIM, if it was me i would make a batch of fudge and put some fresh cranberries in it and see how that comes out, but at the same time, i would try and dry some out in the oven (on a baking tray with the oven on very low) and put some of them in another bit of the fudge and see what comes out best.

the boxes is a good idea, we have one of those really cheap card shops I could try.

my mum got us some small boxes before in a card shop and paid 50p each for them, it may also be worth getting some petit four cases to put the fudge in so it doesnt all stick together in the box.

Thanks Corina -TBH I just bought fresh without thinking as we tend to eat a lot of fresh fruit and veg and it was only when i read this that I though ooops!

If anyone has used fresh cranberries please do post on here how it turned out as it would be an incredible waste of a ton of white choc if its a disaster.

why thank you, its only cos i have it all in the cupboard ready to do next week when ds1 finshes school, we are making sweeties to give to aunties and uncles instead of presents. Would someone please post recipe for white choc fudge as it sounds devine.

the white choc fudge recipe is here:

white choc cranberry fudge

3 375g pkts of white choc (broken up)
2 tins - 395g sweetened condensed milk
3/4 cup icing sugar -
1 cup chopped raisins ( dried cranberries)
(I also put in sultanas and would do some sort of nut if I knew the person did not have a nut allergy)

  1. In a double boiler ( I just use saucepan inside another that has boiling water in it ) over a low heat - melt and mix the sweetened condensed milk and the white choc melts
  2. when melted and thick, remove from the heat, add the icing sugar and the friut/nuts.
  3. pour into a baking paper lined slice tray.
  1. Chill in the fridge until set ( I leave mine over night)
  1. Cut into fingers/squares. Arrange in a bowl/mug/dish etc. I then cover it with cellophane. I have also wrapped the fingers in cellophane individually.

I did half the recipe to see how it worked and it looks good so far!

We'll be at the ILs for Christmas and I wouldn't want to enter MILs territory in the kitchen believe me!

I might make some cranberry muffins instead.

so how long should it take to set?

I made it about 5 hours ago and I'm a little worried as it's still very gloopy - what might have I done wrong?

i would leave it overnight at least to make sure it is set properly.

Had a mini panic about the fresh cranberries so popped into town and bought some dried ones from Julian Graves ( NB. they are on a BOGOF so 32.49 for 2 packs).

Hopefully we'll make the fudge tomorrow or Sunday

all the ones that I could find today were mixed in with other fruits - I'll check out a couple of shops tomorrow, although my dd's will prefer it without!

I made half the recipe to check it works and it nearly fills an 8" sandwich tin.

You prob didn't cook it for long enough, til it is thick and gloopy.

I wonder if you could pour it back into a saucepan and just carry on?

i think its probably cos u used evap and not condensed milk, condensed milk is a lot thicker., do as suew said and try and pour it back into the pan and see if you can salvage it, or pass a spoonful this way.
