Chocolate tart, looks fab tastes bitter...?

What did I do wrong

400g dark choc, 3'eggs, 250ml double cream, 150 milk. Bake.

That's it. Choc too strong? Does it need sugar? Syrup? Salt?

It was a practise run for Christmas so would appreciate help!!

I agree lack of sugar is probably the problem. Alternatively, could you have burnt the chocolate slightly?

Thank you, so add sugar next time. How much? I guess I could have done Jess, I think it was a little undercooked too though so...

Does the type of chocolate have a bearing?

Did you taste the chocolate? If it is a very strong dark chocolate like 70 -80% it might just be more bitter than you are used to.

Personally I only really like 50% dark chocolate, the others are too strong for me.

Golden caster sugar best. Beat in whilst chocolate is melted.

Are you using a recipe?

I would say it needed sugar or slightly less coca ratio

Thanks Laundry. She uses 100g of choc, I used 400g..😲.

I LOVE strong chocolate, I buy 80% for myself but this was just a morrisons 79% that I've not tried before. The result was more bitter than strong. I want that deep, chocolatey ganache type thing. So, next time I'm going to reduce the choc to 300g add sugar and buy better choc, any recommendations?

Chewbecca yes, its from landscape magazine and its chocolate tart topped with toasted cobnuts. We have a cobnut tree in the garden and I wanted a Chrissie dessert where I could use the mountains I've been harvesting!

We use Waitrose Belgian chocolate for this sort of thing. It's 50% cocoa and you don't need to add more sugar v

Reasonably similar recipe to yours but also has hazelnut pastry. You definitely need sugar, some magazines make errors in printing Hmm
Also cobnut meringues are the best thing going.
