Marzipan in Mince pies anyone?

Do you put a lump in the bottom pre mincemeat or roll it flat and cut little discs out and line the pastry with them?.

I havent made mince pies for years so I'm a bit rusty.

Last year we cut out stars of marzipan and used them as the lids.

I have used a teaspoon of sweetened Philly in the middle of the mincemeat and added a marzipan star or star pastry top as dh doesn't like marzipan.

Egg custard, home made mincemeat, topped with soft meringue. No marzipan.

Haven't tried it myself as I didn't get around to making any last year but a friend recommended putting a disc of marzipan in the base.

I've done frangipane ones before, lovely. Another good tip is to shave a tiny bit of orange zest over the mincemeat before putting the lids on, it really perks them up.

I occasionally make marzipan lids, but shpo bought marzipan tends to be more like fondant with homeopathic quantities of almond in, these days.

These days, I make a macaroon topping with almond, sugar and egg whites, as I normally have some left over from making the pastry.
