Has anyone made this or do you have a nice vegetarian ravioli recipe that is not ricotta and spinach (we need a change!).

I've never made it but I've eaten it loads - it's LOVELY!!!

Grin Thanks Clayhead ... I have eaten it but never made it, was wondering whether anyone knew that recipe because 2 hours is quite a long time in my life!!!

Have got tons of sage in the garden and everything else I need.

Does it have to be ravioli? I've made similar stuffed pasta dishes with dried conchiglioni rigati and cannelloni.

Yes Grin, I bought a lovely ravioli tray and rolling pin in Italy last week - it has to be ravioli.

I use butternut squash in lasagne, roast it, add toasty pine nuts, feta cheese ....we're not veggie so I do throw in some ham too sometimes....but it's lovely with a nice rich tomato sauce!

I recently bought a ravioli tray and had the best afternoon with it making millions of fat raviolis :o

Thanks Dancing, DD wouldn't eat that I don't think but would eat the squash one. I think I will just wing it, I rarely follow a recipe to the T to be honest.

Tondelaya, that sounds good, I do something similar with goats cheese if I have some that needs using up. I like thyme with goats cheese/squash mix.

I enjoy making pasta too - something nice on the radio. I just want to make something different on Sunday, obvs it has to be ravioli!

The beauty of having your own ravioli press is that you can make a selection of fillings and make a few of each. So your DD can have what she will eat and you can try new things.

Some fillings that I like are tomato and cheese, mushroom, walnut and cheese, sardine, lemon and cheese.

I only ever cook one meal!! Have done since she was born (only exception being curries where I make a few and she has the mild one). She gets our food ... or nothing is an option Smile.

I've not seen them before. Do you need a pasta rolly-out machine too, or just use a rolling pin? I'd like to have a go at making my own pasta, but it seems a bit of a faff!

Yes, you need a pasta rolling machine but I use one anyway. I really like making pasta, and bread, more than anything else really.

Hi there! Yes I've made pumpkin ravioli although not since the DC! The main thing is to make sure the squash is quite dry and has lots of flavour - I think my recipe (Essence by David Everett-Matthias (sp?)) recommends crown prince squash which was quite hard to find but I've had it from riverford a few times now.

Mmm delicious with sage brown butter!

Have made a pumpkin ravioli recipe - might have been a Carluccio, thing I remember was the ridiculous length of time it took - I made enough for a main course for 4. It was worth the effort because it tasted fantastic but I'd struggle to find the will and energy to make it a second time. I didn't have a ravioli press - maybe that would have speeded things up.

I do lemon sage butter with spinach and ricotta ravioli - love it. I bought 4kg of parmesan from Italy last week, now cut into 5oz pieces and in my freezer Grin.

Not that exact recipe, but there was an awesome floyd (i think although may have been stein) one ive tried in which the filling is butternut squash, parmesan/pecorino or similar, crushed amaretti biscuits and seasoning which you then serve with sage butter and more cheese and it is so tasty. will see if i can locate recipe

That sounds nice ..... still have the ingredients, just lacking the 2-3 hours I need right now! Might try for it tonight but I have got tons of work to do before tomorrow.

tondelay that butternut and feta lasagne sounds absolutely delicious. never occurred to me to do a lasagne with anything other than ragout and béchamel.

Butternut ravioli is gorgeous. A friend of mine serves it with fresh sage leaves fried in melted butter and olive oil. Not healthy but divine.
