STRAWBERRY MOUSSE - WILL IT FREEZE?

Apologies for caps, but I need a quick answer.

Yesterday I made a mousse with previously frozen strawberries, raw eggs, cream, sugar and gelatine. Now my children say they are too full up to eat it but the cream was right on its use by date so it won't keep until tomorrow. Can I freeze mousse does anyone know? Does it matter if the strawberries were previously frozen? I have a feeling it does.

Did the cream smell ok when you used it? If so I would not freeze the mousse but just refridgerate well and serve tomorrow. They tend to be quite conservative with use-by dates and I find cream etc can usually survive an extra day or two, especially cold weather.

My hunch is the mousse would freeze but not defrost - I think it could lose its moussiness in the defrosting process. If you really feel the cream was totally past it then I would freeze it but serve it as an icecream rather than trying to defrost it back to a mousse.

The cream's use by date was 4th December and I made the mousse yesterday but no cooking was involved so it is really 2 days over now. he smelt fine though yesterday and I too thnk things can last longer than the use by date suggests, especially, in the case of cream, if you have not previously opened the carton as I had not.

Oh bother. I don't think I dare wait for tomorrow. Anyone want to come round for lovely homemade mousse?

Personally I'd fridge it but taste it tomorrow before I served it to the kids. At least if cream is off you can taste the cheesiness, it's not like (say) sausages when the first hint that they were bad tends to be stomach cramps!

After all, don't forget if you freeze it you'll still need to defrost it - so if it's bad enough to go off overnight, it could be bad enough to go off in the defrosting period... if that makes sense? Not sure I explained myself very well!

OR scoff the lot yourself. Which if I am being honest is what I would actually do! Masking my guilt with a feeling of having virtuously saved my child from poisoning!

Well dd and I have had some now and I will get dh to eat some too when he is home so maybe only half will be left/wasted.

Gosh I couldn't eat it all myself!! 1 lb strawberries, 3 eggs and half a pint of cream!!! I wouldn't be able to eat again for a week!
