What can I use extra leek for?

I buy it for making tattie soup, but often have too much and there are only so many bowls of soup we want in a week!
What else can I do with it?
Or do I just make more tattie soup and freeze it?

creamed leeks as veg?
we like them cooked in a frying pan with a dash of white wine and a good glug of cream.

cheesy leeks

slice them, saute them lightly in butter, S&P, nutmeg too if you have, tip into an ovenproof dish, pour over some double cream, enough to at least cover the bottom of the dish, bury the lot in grated cheese and into a very hot oven

like that it's fab as a fancy veg dish, or if you have some ham/gammon/bacon, shove that in the pan with the sautéed leeks and you have a delish lunch! :D

I put leeks in everything, spag Bol, chilli, casseroles, stews etc. They go really well win a lot of 'one pot' type things.

Cheesy leeks are another good suggestion, I do ours similar except I don't use cream.

Chop them and put them in a potato dauphinoise.
Add to left over mash and other veg to make bubble & squeak.
Shred and use in a stir fry.

Any that are past their best - slice up and put in a bag in the freezer, then just grab as much as you need for a dish the next time.

Make bacon and leek quiche. Or add to spag bol, cottage pie, stews etc. Steam and serve as a side with some butter and black pepper. Add to an omlette.

Also good instead of or with an onion when making stock - also a good use for the tougher dark green leaves.

Sautéed with mushrooms, soft cheese, garlic, herbs and black pepper. It makes a nice jacket potato filling.
