What to do with loads of cabbage?

I have a glut of cabbage from a couple of weeks of veg boxes.

I have:
1.5 savoy cabbages
1 large cauliflower
1 romanesco cauliflower which I want to do something special with but no idea what
an unlabelled bag of some sort of hardy green leaves.
Also the dredges of a bag of baby spinach.

Any ideas? I would make a soup but don't have any potatoes in the house and have already trekked to the shops today. I am no good at just winging soups, they always end up bland. Could I do a soup without potatoes though? Just chuck some stuff in and some stock? Only have beef or chicken oxos in the way of stock cubes.

In the house I also have leeks, courgettes, carrots, onion, garlic, peppers, chillis, rice, pasta (only big, not soupy pasta), kidney beans.

Am currently batch cooking bolognese so am on a cooking roll and want to use these up NOW.

Cauliflower is great in curry. I'd stir fry the onion until soft, add some more veg, then add a big spoon of curry paste and the florets of cauli, a tin of tomatoes (or coconut milk), stir and simmer until the cauliflower is tender. Serve with coriander on top. If I'm in a rush I just use a jar of ready made sauce.

Cabbage is really nice in mashed potato, or stir fried with bacon. I'd be tempted to make macaroni (or whatever pasta you have) cheese with half the pasta replaced with romanesco.

Cabbage is good in coleslaws. Better than in soup.

However I regularly make soup without potatoes and it is fab. Are you cooking the onions slowly enough before adding the rest of the veg?

Ooh! Cauliflower curry sounds delicious. We were going to have curry of some sort tonight so that's what I'll make! Thanks.

Do you think I could freeze some cabbage for use another time? I do like bubble and squeak if I've got leftover mash so would be good to have some cabbage to hand, haha.

Might pickle it too! Is that basically saurkraut? Had a delish pastrami and saurkraut sandwich for lunch today so that's an idea.

A minestrone can absorb lots of green leafy veg and doesn't need potatoes.

And yes cabbage is nice with pasta and ham / bacon with Parmesan.

I've had my fill of coleslaw I'm afraid, after making a colossal amount for a BBQ that saw us through the summer Grin

Roasted cauliflower is lovely. Agree that it's brilliant in curries too, and the spinach would work with it as well.

I love cauliflower rice with curries. Just grate up the head into rice sized pieces and steam.

I like it stir fried - Madhur Jaffrey 'cabbage and peas' is a good one (basically, those and onion, whole cumin, tumeric, chilli and garam at the end) or 'Gujurati style cabbage and carrot' (those and mustard seed, chilli, dried chilli, lemon juice).

Or if you blanche cabbage you can certainly freeze it! I also like bubble and squeak but you have no potatoes. I think Abel & Cole's 'Rumbledethumps' (dunno either...) is lovely.

You could make 'crispy seaweed' and have it as a side dish. As AlisonW says above.

You sprinkle some oil and salt and cook it low for around an hour. I had some with seasalt. Lovely. But it doesn't stay crispy or keep well, so not very useful for you. My kids love it.

Smothered cabbage Venetian style is gorgeous and uses a lot of cabbage. I've never made the soup; just done the cabbage which is especially good with pork products.
