Spinach filo thing

Ate a really good Greek-type filo thing a while ago and looking for a recipe if anyone makes anything similar. It was circular, filo on the top and bottom, filled with spinachy mix and cut into thin wedges. Looked a bit like a quesadilla! Any ideas for spinach filling? Or how many filo layers you would do for the top or bottom?

Also idea on oven temperature/time? And what to bake it in/go freestyle? I'm normally okay with guessing recipes but I feel like I'm on a technical in the Bake Off and floundering!

I mix cooked spinach with crumbled feta, chopped mint or dill and an egg. Pack into filo, using a cake tin. Cook at 200 for around 30 minutes.

I make this quite a lot (my stepdad was Greek). The method I've concocted over the years (which tastes very similar to his) is as follows:

  • 1 white onion, fried with some butter until softened.
  • while it cooks, fill a cereal bowl with those funny little frozen spinach chips and defrost. Tip it into a sieve and press out the water with the back a spoon or whatever you have to hand.
  • grate a whole nutmeg and, in a separate cup, quickly whisk one egg.
  • once the onion is cooked, turn down the heat, add the spinach, nutmeg, and crumble in about 200g of feta cheese. Once it's all combined, stir in the egg.

I then grease a small casserole dish with olive oil and fill it with layers of filo, lengthways, then sideways, then lengthways, etc. The top and bottom of each sheet should hang over the sides of the casserole -- enough to fold back over itself, if that makes sense? About 6 sheets of filo usually does it. Enough so you're confident the mixture won't leak through or make it soggy.

Tip in the mixture, push it out so its evenly distributed, then fold over the filo sheets to make a sealed parcel. I sometimes melt a stick of butter and pour it over the top.

Pop in the oven on about 200 for 20 minutes or so until its slightly brown and crispy.
