I'm making sweet and sour chicken tonight, from the hairy dieters book.

It tastes almost exactly like the takeaway version but healthy too!

i make this at least once every 2 weeks. Whole family love it - i only use dried crushed chilli and i reduced amount when kids were younger. Serve with green salad, yoghurt and couscous (the instant kind).. Marinate 20 mins ahead of time (or longer) and the whole thing takes half an hour. OOh I want this for dinner now

Ingredients
350g (12oz) chicken fillets or boned pieces
1 fresh red chilli pepper, seeded and finely chopped
1 teaspoon crushed dried chilli powder
2 cloves garlic, crushed
Juice of 1/2 lemon
2 tablespoons olive oil
1 teaspoon ground cinnamon
2 tablespoon sultanas or raisins
2 tablespoons pine nuts
1 tablespoon chopped mint (I use mint sauce)


  1. Mix together both the fresh and dry chillies, garlic, lemon juice, half the olive oil, sultanas/ raisins and pine nuts.

2. Place the chicken in a shallow dish (I use a plastic bag actually)and pour the marinade over the chicken and leave to marinade.
3. Heat the remaining oil in a shallow pan and add the chicken pieces.
4. Cook over a high heat until golden brown and then turn to cook the other side.
5. Pour in the marinade ingredients and bring to the boil, add seasoning and scatter over the mint leaves.
Serve with the pan juices.

and i make this one though can't find the actual recipe i use to cut and paste, the hairy bikers one is close enough. I always use thigh fillets - very cheap. Use greek yoghurt not sour cream and serve with brown rice to soak up the juices plus broccoli (always!)

Tonight I'm doing braised chicken thighs and legs with button mushrooms and bacon lardons/pancetta with mash and greens.
V easy and delish.

we call this lemon Moroccan chicken in our house. goes down a storm.

in a blender, combine:

2 large onions, peeled and roughly chopped
2 cloves of garlic, peeled
3cm piece of ginger, peeled
1/2 cup on stock

process until thoroughly chopped but not reduced to a paste. stir in

1tbsp turmeric
1tsp ground cinnamon
a pinch of saffron
salt to taste

place the chicken in a large ovenproof pan with a lid. pour over the onion purée and place in the oven at 200c until done (1 to 1.5 hour) ensure it doesn't dry out. add a little water as necessary.

remove the chicken. cut it up and keep it warm.

add to the pot

3 tbsp butter
finely sliced peel of 4-5 preserved lemons (you can discard the flesh. it's kinda nothingy)
juice of one lemon
a few olives

boil gently until thickened. pour over the chicken and serve sprinkled with fresh parsley and cous cous.
