Sounds good but I have four and these mostly need just one. Maybe something that would freeze? I either don't get enough bananas or have them going overripe depending on the whether dh and dc decide they like them that week or not...

Peel, slice, stick in a bag in the freezer and forget about them while you think about it.

If you mush the bananas up and freeze them, it makes a lovely ice 'cream'.

This: 4 bananas, 75g marg, 100g sugar, I egg, 225g sr flour, fling it all together in a bowl, do with electric mixer, into oven 50 - 60 mins at 180 degrees. You have banana bread, tadaah! Careful the top doesn't burn, and throw in walnuts if you like Smile

Most banana loaf recipes use 3 bananas. I can't think of any that use just one as the results wouldn't taste very much of banana.
You could also add some other fruit and make smoothies.

Peel, slice and freeze. After at least 4 hours tip the hard lumps into a food processor and set on high until soft. ( stop as soon as possible as you don't want them to defrost).
Eat immediately in cones with a sprinkle of grated plain chocolate.

Ok, banana loaf it is Grin, I have some fresh ones too so beginning to hope they don't get eaten and I can try some of the other ideas.

Chop them up in coins, freeze flat and then tip into a zip lock bag once frozen. Save and make banana ice cream out of them - you basically just blend up frozen banana. Amazing.

I've just made this banana bread. 4 ripe bananas weigh 400g, so almost perfect for this recipe.

It was lovely.

I made the John Barrowman banana bread recipe (it was the one I had the rest of the ingredients for) - very nice Smile. Preferred it fresh when the crust was crispy but still good two days later.

My next batch of bananas are looking like they will also ripen before being eaten so I plan to try the Nutella and banana muffins in another day or so.

I am also going to buy fewer bananas for a while as they don't seem to be getting eaten in their raw state and lovely though cakes and muffins are I shouldn't eat too many...

I freeze bananas all the time - i use them later in smoothies or any recipe which requires them to be mashed, they come out fine.
