I think the sugar will act as a preservative, so no. ----

I could be wrong.--

No, the cake will be ruined if you keep it in the fridge. It will dry right out.

Thank you

How far in advance are you making it? By rights if the icing has cream and cream cheese in it it should be kept in the fridge but if it isn't all that long and it is in a cool room it'll be ok.

I researched this as was making cream cheese frosting for DD's birthday cake and it turned out should only be 'out' for three hours. I stuck to this as was baking for people other than family.

I've kept a cream cheese frosted carrot cake covered in my (cool) kitchen for 3/4 days though, and eaten with no ill effect.

There is a thread here that starts put "it'll be fine !" and then the professionals come along and say something entirely different.

Oil based cakes IME are fine in the fridge and don't dry out.

I was poisoned by a cake with a mascarpone based frosting in 2008. The maker felt fridges were optional. My guts disagreed. Strongly. All night, and most of the next day. So I vote fridge. With a face like this Envy due to the memory of the Night of the Come Back Cake.

Ooh. Thank you. I'll tell the person I gave it to.
