Can I swap gentle simmer for oven?

I've got two recipes I want to try off bbc good food, chosen as they are easy family meals. One a Moroccan chicken type and one a beef stew.

Once the chopping and stirring is done, they cook slowly, but over a low heat on the hob. I'd rather pop them in the oven as I think its lower maintenance and wouldn't feel the need to keep popping back and stirring so often. Would the recipes work ok? And what temp would I go for? (Normal elec oven no fan).

I always do this - I use my cast iron casserole dish with lid but anything covered would do. I think it ends up nicer than done on the hob! I'd go for about 160/180 - just keep an eye on it. Once you've done one you'll have a feel for whether your oven runs hot or cool.

I would go for a lower temperature like 120 but for a long time- I do bolognaise sauce in oven over night on 2 ( gas).

Ok thank you. Maybe I'll try 140 then, middle ground! The chicken recipe says can be done over very low simmer up to 4 hours, but that would just stick on my hob but may well work better on a lower temp in oven. Thank you.

Thank you, the Moroccan chicken went down well, cooked at 140, after initial browning in pan on the hob, then oven for a couple of hours with everything else.

Beef stew tomorrow now!
