Recipes which are good ofr hiding vegetables.....

DS loves his food but has recently objected to vegetables that are not in some sort of sauce (pasta sauce, cheese sauce etc)

Anyone got any good recipes (quick ones if possible) where veg is in sauce as part of a meal or is 'hidden'?

things I have done:

that salmon and creme fraiche pasta with lots of brocoli in it and also mashed up cauliflower - needs loads of cheese.

the other day i made vegetable soup and blended it then cooked pasta and basically gave DS vegetable soup pasta sauce with lots of grated parmesan over it (loved it whereas had thrown the soup at me)

also made a tomato sauce (tin of toms and onion) and added leftover veg mashed up) which then went with burgers (not quite so popular that one)

I think one of the Annabel Karmel recipes has pureed aubergine in a pasta bake which sounds yummy.

I do carrots chopped up small in shepherds pie.

Pizza. I buy pizza bases and add my own tomato sauce which consits of a tin of tomatoes, clove of garlic, herbs, 2 carrots, 2 courgettes and a can of natural sweetcorn, all simmered together, blended and frozen in icecubes.

My ds is very fussy over veg. Likes raw carrots and peas. He will eat all sorts of veg in pureed soup, even broccoli and spinach. When he was younger and asked what was in the soup, I would just say, in a vague way, 'vegetables', without being specific. Now, he is older and wiser. Sometimes, raw veg is more appealing, especially with dips.

When I need to get red peppers (good source of vit c and carotene) down ds, I blitz them in the food processor with a couple of sticks of celery, a carrot and an onion, saute the lot in a little olive oil with some chopped garlic, then add passata and some soft goat's cheese just at the end.
Ds will eat this but will not touch peppers or celery in any other form...
If you start the sauteeing at the same time as the pasta goes in the boiling water, this takes about 13 mins start to finish.

These ideas are excellent - my own particular victim happens to be 32 this year and I am determined that he is going to get over it before our son starts learning his ropey habits!

Soup. Put in any veg you like and blend it.

Shepherds pie or lasagne - cook food-processed veg in with your mince or quorn.

Mix diced veg with baked beans and cook in a pie.

Quickest pasta sauce on the planet:

Blend together Boursin cheese, (though ordinary cream cheese will do) red peppers, watercress or any other greenery. Put on just cooked pasta, the heat will melt the cheese. Surprisingly yummy.
