meal planner ideas for mostly veggie household

Am having to do some serious saving as dh will be salary-less from Feb (hopefully not for too long though). Have already left beloved Waitrose for Sainsburys and now need to start doing meal planning. Does anyone have a good sample meal plan (two or three week rota) with mostly veggie suggestions? Get veg box and milk delivered.

I know you want a whole meal planner but a really good recipe is layered potato, onion and cheese bake. Slice potatoes and onions really thin, layer then in caserole or tin with plenty of salt and pepper, pour milk (or milk and water)over whole thing, add grated cheese on top and bake in the oven until all is cooked and soft and creamy!! Yummy and cheap. Good idea to cover with foil for first half hour so it doesn't dry out, then cook for further half hour uncovered.

that's all I can think of I am the world's worst meal planner but we do eat a lot of those pulses!

Try Morrosons rather than Sainsburys.

I did a weekly shop there today for first time, inc box of Persil and it was £37. Its normally around £50 in Tescos, without the Persil.

Scrap the delivered veg box as well if you really need to save money

Thanks for this timely thread newkid.We are a veggie household and I really want to intorduce some new/healthier dishes.

I would say that you may struggle going from a veg box to Morrisons as their fruit and veg is packaged to high heaven. I cannot shop there for fear of my blood pressure spiralling out of control!!! I made an effort last week and went to the farmer's market and it was fab for cheese and veg. I will try and go each month now. For instance got big bunch of carrots and made soup with coriander from local asian supermarket - very cheap for nuts and rice too.

Great thread! You beat me to it as I've been thinking about this too recently. I'm veggie, dd1 mostly veggie (ie doesn't like meat) and dp and dd2 are carnivores but happy to eat veggie most of the time. For us, a typical winter wek might go something like:
Monday - homemade lentil soup (v cheap!) with good bread, cheese and fruit
Tuesday - pasta with red pesto, peppers, onions and mushrooms for me and ds and just with pesto and salad for the girls
Weds - baked potatoes, veggie chilli, cheese, guacamole
Thurs - veggie curry and rice
Fri - eat out
Saturday - homemade pizza and garlic bread with homemade coleslawSunday - veggie sausages (or meaty for dp and dd2) with yorkshires, potatoes and vege

have you tried rose elliott's recipe books, i hd a good one a long time ago but it has fallen apart, beanfeast or something like that?

and any variation on potato + veg + egg/quorn/tofu

actully i found the rose elliott book, all broken 20 years+ old, bean book it's called.
