Quick, easy, tasty banana dessert ideas needed

I have a bunch of slightly overripe bananas which I think need to be eaten today. What would you do with them? Dont want to just serve with ice cream/yogurt, something slightly more exciting if poss..

Banoffee Pie! You can buy the toffee in a jar in Waitrose, just smash up digestives in a bag, mix with melted butter and push into tin. Top with toffee, sliced bananas, cream and grate some chocolate curls onto the top.

Or slice open, stick a bit of chocolate inside, wrap in foil and bake (still in skins) for 10 mins in hottish oven

CD - I do the chocolate ones. I stuff them full of Cadbury's buttons. Yummy!

Slice lengthways and then in half across the way (ie into 4 pieces). Lay in a single layer (or near enough) in a shallow over proof container. Sprinkle over some muscovado/dark brown sugar (demerara will do at a pinch) - a couple of tablespoons. Sprinkle over some cinnamon. Dot with some butter (4 or 5 small pieces). Pour over some orange juice - about enough to cover the bananas. if you have some sherry or rum, pour in a good slosh as well. Cover container with some foil.

Put in the oven at 180C for about half an hour. Serve with icecream or cream.

Yummy.

Yum thanks, knew I would get some great ideas. d doesnt like bananas but I reckon if I try something new she might risk it, and thus help us cear the banana mountain in the kitchen. Dont have toffee sauce but might try the baked with chocolate idea.

banana sponge pud

mash up bananas with self-raising flour, sugar, eggs and butter and pour into a microavable bowl. Microwave on high until cooked.
Sorry, I always guess ammounts and cooking times so can't give exact measurements.
Serve with custard.

Bake in oven for 15-20mins with skin on. Take out slit skin and pour on maple syrup. We do this on the bbq - delish!

Banana custard. Bake banana as above when cooked scrape out banana into a bowl. Mix with hot custard.

You can do the same with whipped cream to make a fool (I use half cream half no fat greek yoghurt). Fold cooked banana into cream mixture lightly, then pour over a smidgoen of maple/golden syrup.

If you can't get the ingredients today you can stick them in the freezer and use them at a later date for baking or whatever. Overripe bananas are more flavoursome for baking - banana muffins or banana cake.

Put banana, plain yoghurt, fruit juice, and any other fruit you have in a blender to make scrummy smoothie.

You can also use your frozen bananas to make scrummy, icy refreshing drinks in summer:

Simply blend: 2 handfuls froxen strawberries with 2 frozen bananas and a few dashes of oj.

OR 2 frozen bananas, 6 frozen apricots, few dashes of apple juice.

Wow, fab, think I'd better print out this page for future reference. Best tip is re freezing, didnt know you could. But have just done janZ's suggestion, its ready to put in the oven later.

Delicious JanZ! Only trouble is that dh couldnt get back in time to eat with us (he was out in the afternoon and goes to work in the evening) and ds2 who loves bananas was ata friends. Dd doesnt like them and didnt like this dish either so ds1 and I nearly finished off the lot. OK for him but I was supposed to be off the sweet stuff for a while. haha. All the cream we had with it wont have helped either. Oh well, it was yummy.

wrap them in pancakes and top with chocolate/chocolate sauce/cream whatever you want or make banana muffins.

It's actually better with slight UNDER ripe bananas, but it's a very forgiving recipe!

I always freeze them ready peeled because they go all mushy and make an awful mess when you try to peel them thawed/still frozen. I made banana bread yesterday with frozen bananas oddly enough

Aargh Soupdragon I have frozen them with skin on so will look forward to the mushiness when it comes to defrosting

I thought that the mushiness was the whole point - you've effectively got ready mushed bananas, plus you didn't need to find a container to put them in! I just defrost, cut the end off and squeeze out the insides!

Never thought of squeezing them!! I tried to peel my frozen/thawing bananas and yeuk! It wasn't the mushiness that was the problem (they're still mushy when frozen peeled) just the peeling.
