I've just bought Derval O'Rourkes book, and I really like her recipes, but there's a lot of quinoa

I don't mind quinoa occasionally, but I'm not all that keen on the texture of it. Apart from brown rice or couscous what would be good substitutes?

This is the book. I have also recently bought The Happy Pear cookbook, I sometimes go to the cafe and love their food but the recipes are a bit on the fiddly side and some have slightly odd ingredients. Derval O'Rourkes book has regular ingredients (used in unusual combinations) and most of her recipes are fairly quick to make so I think I'm likely to actually make more from her book than from the Happy Pear one.

Bulgar wheat might be good. I'm trying to keep the GI of what I eat down a bit as my blood sugar control has been a bit off recently (type 2 diabetes) so lentils would be good for that, I wonder if they might be a bit heavy though. Thanks.

This has a list of grains you might try, I've tried Spelt and its okay.

You might try polenta - personally I think its disgusting but some people like it.

Thanks for that list. I'm not keen on polenta, I have to admit. I love spelt bread so that would be a good one to try.
