Best chocolate cake ever recipe please, mine always fail

Made a choc fudge cake today with this recipe easy choc cake. It was only okay, the DC aren't fussy so ate it but I was disappointed. It involved adding vegetable oil instead of butter so I used rapeseed oil and I think this may not have helped with the taste.

Others I've made have been too dry, or just not right either. Where can I find a really good recipe for a simple chocolate cake that doesn't rely on having icing as can't stand icing. Send your perfect idiot proof recipes over here please!

The Nigella recipe that has garnered me more compliments than anything else I've ever baked is her dense chocolate loaf cake. It looks rather like a cowpat (it's a very damp cake, which you make with dark muscovado sugar and boiling water) and couldn't be accused of elegance, but is moist, delicious and foolproof.

I make a lot of cakes.
my standard choc one is
150ml oil - I use sunflower
150ml milk (cows/soya/almond)
2 eggs
beat
in another bowl add
150g sugar
180g plain flour
3 tablespoons cocoa powder
1 level teaspoon BICARB SODA

give dry stuff a stir - helps not to go lumpy when you
add all that to the liquid mix
add in a tablespoon black treacle, stir, bake

is fine as it is, or topped with choc, and/or with a choc and vanilla buttercream filling

WaggleBee · 25/09/2015 21:25

Naice yy it definitely doesn't need as long in the oven as she says. I'm doing it for less time next time. It wasn't dry but a tiny bit more baked on too than I'd have liked. Did you do a topping/filling?

WaggleBee · 25/09/2015 21:25

*baked on top

WaggleBee · 25/09/2015 21:26

Oops sorry seen that you did. Smile I'm going to make it again but with a different topping. Just not sure which one yet.

WaggleBee · 25/09/2015 21:49

That Guardian article Preminstrel posted is really good. Lots of good tips and info before the 'winning' cake recipe. I'm making that one as soon as poss.

Whatevva · 25/09/2015 22:03

I think the oreos were somewhat controversial. I would go for bourbons, myself.

MajesticWhine · 25/09/2015 22:03

if you want easy, then Mary Berry's is the one. It always works.
DH likes his mum's cheating Betty Crocker cake, but I don't.
I don't put oil in cakes - is this a new thing?

MitzyLeFroof · 25/09/2015 22:07

I'm opposed to Oreos so I second the Bourbon suggestion.

WaggleBee · 25/09/2015 22:54

I was going to miss out the crumbles biscuits altogether. I'm not sure about having something crunchy on it.

Although I'm not opposed to an Oreo usually.

4 oz (100g) Flora full fat margarine
3 oz (75g) self-raising flour
4 oz (100g) caster sugar
1 oz (25g) drinking chocolate or cocoa
2 tbsp water
2 large eggs, beaten
1/2 tsp baking powder

  1. Mix together, preferably in a food processor.
  2. Put in a souffle dish.
  3. Microwave on high for 6 minutes.

Best, lightest, most moist chocolate cake you will ever eat in your life.
Serve with whipped cream, double cream, or chocolate custard.

Wright 's chocolate fudge cake mix from Aldi. Suprisingly amazing. Blush

Just to let y'all know we'll be moving this out of chat to keep all this chocolatey loveliness for posterity and not let it be auto deleted after 90 days

Excellent! Cake to you Olivia (although the emoticon technically doesn't look chocolatey enough for this thread...)

nowahousewife · 26/09/2015 06:07

This s my teenage DD's fail safe recipe:

www.bbc.co.uk/food/recipes/easy_chocolate_cake_31070

V moist and delicious. V runny mix though so don't use loose bottomed cake tins or half the mix will end up in the bottom of your oven. Cake

BoboChic · 26/09/2015 06:10

Chocolate cake should be made with eggs, unsalted butter, sugar and melted chocolate with a sprinkling of sea salt. Vegetable fats or oil, and cocoa, are the kiss of death to chocolate cake.

ppeatfruit · 26/09/2015 09:03

Mine has no eggs but it IS moist and delicious because it's a luxury cake, no hydrogenated fat or cocoa (though pure cocoa IS chocolate) Grin BoboChic

It would be a shame if people who can't eat eggs or dairy have to miss out on chocolate cake!

Try mine with a maple syrup topping it's gorgeous.

margaritasbythesea · 26/09/2015 09:49

I shall be swimming in cake. I clicked as I have a cake to make for next Friday. Thank you for all the ideas! I nay have to make a few....

pigsinmud · 26/09/2015 10:24

I made the chocolate cake with beetroot in last week. It was delicious. The dc were Shock when I told them there was beetroot in it, but they said it was their favourite cake. There is a recipe on the Tesco website.

ungulater · 26/09/2015 16:09

Chocolate Guinness Cake by Nigella is the default here. It makes way more than 12 slices btw, unless feeding teenagers.

Reastie · 26/09/2015 18:14

Ive been using this Mary berry one for years and love it. The icing is absolutely delicious too.

ItsAllGoingToBeFine · 26/09/2015 18:21

Your recipes are all waaaay too complicated for when you need a chocolate fix 3 Ingredients, 60 seconds chocolate mug cake

MissShunImpossible · 26/09/2015 18:41

I love how the Mary Berry one says "serve in slices" at the end.

There was a clear and present danger of me just sticking my head into the cake and eating it without the use of hands, so it's a timely warning Wink

CanIGoToBedNow · 26/09/2015 20:13

This www.bbcgoodfood.com/recipes/4577/wedding-cake-rich-dark-chocolate-cake is a spectacular chocolate cake. It's a little bit of a more work making sure you prep the tin correctly but totally worth it.

I halve the recipe for a 9 inch cake tin.

I also make nowahousewife's chocolate cake if I need to do a quick cake. I don't go the ganache, but use fresh whipped cream in the middle and chocolate water icing on top! Yummy!!

4yoniD · 26/09/2015 21:42

Yet another Nigella, called birthday cake but it it more half way between cake and brownie. I make mine in a Bundt and don't cook it as long. DO make it the day before, it tastes better / richer the next day.
