Vegan meal ideas please!

I currently have a teenage began in my home, and need recipe inspiration. DCs usually eat earlier so we can have spicy food, but DH is diabetic so try to avoid lots of carbs. We have had:
Lots of curries, often including chick peas
Dhal
Soups
Veggie burgers or falafel
Stews, usually containing beans
There must be more options! Any ideas please?

My current favourite is Koshari which is Egyptian Street food.

Pinterest has lots of ideas including a black Bean fudge that I want to try out.
Disclaimer - I'm not even veggie but like to try veggie and vegan meals.

Just googled koshari and it looks yum. Lots of rice so not great re diabetes but as an occasional option lovely.
I just checked and ready made pastry is vegan - I assumed it would have butter, but no, vegetable oil! Thank you Willhamena, pies, veggie tatin, tarts coming up.

Can't find black bean fudge anywhere, do you have a link? I have made avocado chocolate mousse and butternut biscuits so I'm totally up for hidden veg puddings.

You can also make a cashew cream /cheese that can be sweet or savoury. Lots of recipes and uses online. Not done this Yet
Spiralling veg for noodles.not done this either but looks amazing
Avocado icecream
Risotto
Chips, lots and lots of chips

Seriously, get onto pinterest which is where I find all of my recipes.

There's a great vegan cafe in Camden that does Cauliflower cheese which is the best I've ever tasted so it can be done.

Just Google black Bean fudge and there are plenty of recipes.

A lot of things with potato (don't know how that ties in with diabetes) like Shepherdess pie

Just realised that you can make rice, mash and pizza base out of Cauliflower too.

Savoury baklava could be an option

Cashew nut curry is really nice

Sorry if these ideas don't work for diabetes. I'm afraid I don't really know much about what kicks it off.

Useful additions to your store cupboards are:

Walnuts, chia seeds, dried fruits (esp dates, apricots, cranberries) chestnut flour and other gluten free flours, a variety of oils, including coconut oil, nut oils, omega 3 rich oils (though watch for fish if your teen is not freegan) avocados also good.

We always have tofu and tempeh in the fridge and a LOT of different fruit (bananas very good substitute for eggs or dairy in some recipes) and veggies. Various non dairy milks.

Warbuton's wholemeal pitta pockets are great. They're round, you cut in half and toast and they open up to be filled. Great for lunches and weekend snacks on the go. Wraps also good, whilemeal and seeded anything is going to pack more nutrition in per bite.

Home made hummous and chutney is a useful staple. Those Tilda and Uncle Ben's cooked wholegrain pouches are great for a quick and easy way to boost carbs for one or two family members. My teens just help themselves now.

Veg on sticks.

Smoothies.

'Noodles' made from strips of veg like carrot or courgette can help cut down on the carbs. (growing teens should have extra wholemeal bread or grains/pasta with their meals though).

Agree that Pinterest is full of ideas, but getting the teens to cook and experiment themselves is a great way of exploring different options.

Yottam ottelenghi had a beautiful recipe for fennel tart tatin in the guardian. Not sure what's in it but it could be easily veganised.

How about:
Vegan chilli con carne
Bean burgers
Ful Medames
Veg stews - butternut squash, cannelloni beans and basil
Falafel / hummus / baba ghanoush

Wow brilliant ideas! I have ordered a spiralizer, a world of pasta sauces will open up! Cauliflower rice is great, the pizza base is a faff and needs cheese. I'm going to look into cashew cheese though a bit Hmm about it.

Yes Peace the conflicting dietary needs of two DCs, a chilli loving vegan still growing teen, and diabetic DH are complicated. Alternatives to carbs like spiralized veg work well.
Fennel tart tatin sounds amazing.

This is not ideal for your diabetic DH, but this is my favourite ever vegan meal vegan macaroni and cheese bake well worth tracking down the nutritional yeast and miso for! Though I find that you need to make extra sauce if you want to use that much pasta, and to make sure everything is blended really thoroughly. But it is delicious!

My teens are dairy free, one is freegan, and the other will eat eggs. They both have daily multivitamins roo. Getting enough fats in their diet is the biggest hurdle (fats transport hormones around the body, kerp lines of communication open and watch for periods stopping. This is a serious sign of malnutrition and needs medical attention and assistant/intervention.)

Sounds lovely curiouser, pretty sure Waitrose does miso paste though no idea about nutritional yeast! I could always chuck in loads of veg.

Don't forget rice noodles which are made from rice and water - you can get them from Asian food shops.

Goulash with dumplings (DH found vegan suet in Tesco)
Sweet potato and chickpea burgers
Mushroom bourgignon from that veganista site
Noodles with stir fry veg and cashew nuts on Weds as I have an evening meeting and need something quick
Butternut and spinach curry with Cauli rice
Plus a big pot of chilli for the weekend and leftovers for lunches, followed by a big pot of tomato and lentil soup.
I am also perfecting vegan sugar free banana and walnut loaf Smile
