What can I do with a potato?

That's interesting I mean. I have pork steaks in gravy in the slow cooker. Want to do DP a nice dinner, I usually never cook as I work away.
We have a lot of mash/jackets and he doesn't like roast. Any ideas? Could get extra ingredients. Skills are limited though Confused

Fondant potatoes,
Potatoes , half pint chicken stock, 1oz butter herbs & garlic.
Method
Peel the potatoes, cut a flat top and bottom on your spud.
Cut out a round of potato with a pastry cutter.
Cut off the sharp corners to make a nice barrel shape.
Melt the butter in a saucepan over a medium heat until it starts to foam.
Place the potatoes in the pan and cook for about 5-6 minutes until golden on the bottom.
When done turn over the potato and cook for the same time again.
Add the stock.
Put in the crushed garlic clove and thyme sprigs, watch out for this exploding everywhere. Season well.
Cover and simmer gently until the potato is cooked. Keep warm.

Potato bake - with cheese & bacon sauce.
Sauté some potato slices with onion -(sauté lyonnaise) in butter & oil. You could always add blanched cabbage with it, that's quite nice. Stops faffing with extra vegetables.

Potato pancakes: Grate them, mix with an egg, flour, salt and pepper. Drop into a pan and fry in oil, about 2 minutes on each side.

Usually about 2 large potatoes, and about 3tbsp flour per egg.

annie that sounds yum but so much work!

I would do rosti or garlic roasties. Both easy and go with anything!

Definitely champ or colcannon mash (I.e with quickly fried kale or cabbage for colcannon or spring onions/leeks for champ). Lots of butter, maybe some warmed cream too.

Both lovely with pork.

Ok, so have gone with wedges, tossed in oil, garlic and coriander for tonight. All prepped, pork on keep warm in slow cooker, DP just got home and looked impressed (I only cook toast generally). Will try some of the other suggestions next week.
