MrMiaou's bread and pizza dough recipe

At Mellowma's request, although I know other people were asking for it over the weekend!! Sorry morning sickness is preventing me from discussing food atm but MrMiaou has retreated to his shed so he asked me to post on his behalf:

Ingredients

1.5 lbs strong flour
1 tsps yeast (the one you add to flour, not pre mix with water)
about 3/4pt warm water (half boiling half cold)
2 tsps salt
1 tsps sugar
1 tblspn olive or sunflower oil.

If you have a food processor or kenwood chef you can cheat, bung the whole lot in and mix adding the water gradually until all the flour in mixed in. If mixing it by hand you need to knead the bread for a few minutes until it is soft and elastic. Either put in a loaf tin, or shape as required on a baking tray. Leave in a warm place for about 40 minutes to 2 hours until about twice the original size, then bake for 25 to 30 mins at 170 degrees.

If you are making pizzas, then the amounts stated will make three pizza bases (which is about right for our family of five). Simply divide into three and roll out to the shape of your trays (pizza trays are really good for this). We don't pre-bake them, just flour them then put the tomato base and toppings on the top.

Any questions, just ask!!!

My basic tomato sauce is 1 tin of tomatoes (13p) 1 tube tomato puree (26p) garlic, black pepper, herbs to taste. Blitz in processor, voila! Makes enough for 9 pizzas.

can you freeze them? DH has gone off of my pizza bases! lol. also can you use olive oil instead?

munz · 29/11/2006 13:34

(sorry you answered tyhat one lol. 6

As I always make 3 pizzas at a time I never need to try freezing them, but can't see any reason why not. (I guess that is not totally true, but if I'm making less or more I just adjust the dough mix to suit

I would suggest baking the bases for about 6 to 7 minutes at 170 C then allow to cool and freeze. For use I would then top as required whilst still frozen and bake for 12 to 15 minutes at about 180 to 200 C

But remember I've not tried that yet so that is an educated guess!
