How do I make a yummy Banana cake?PLEASE HELP ME!!!

I have a lovely little farm shop by me that I can buy it from but its fairly expensive for what you get. I would love to make my own with ds as he loves to help me and loves said cake! Any recipes grateful xx

"Make your own by beating 75g softened butter and 125g full-fat soft cheese with 200g sifted icing sugar and a dash of vanilla extract."

Makes 1 x 900g loaf
Preparation time: 30 minutes
Cooking time: 40-45 minutes

2 ripe bananas (about 400g)
150g softened butter
150g soft brown sugar
80g sultanas
300g plain flour
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 eggs, lightly beaten
100ml vegetable oil
Instructions
Preheat the oven to 180°C/gas 4. Butter a 900g loaf tin and line the bottom and sides with non-stick baking parchment

Peel and mash the bananas. Put the butter and sugar into a mixing bowl and cream together until light and fluffy. Stir in the bananas and sultanas. Sift together the flour, baking powder and bicarbonate of soda. Add the flour mix and the beaten egg, each about a third at a time, to the banana mix, beating well between each addition. Finally, stir in the oil.

Pour into the loaf tin and bake for 40-45 minutes until well-risen and golden brown and a skewer inserted in the middle comes out clean. Leave in the tin for 10 minutes then turn out on to a wire rack to cool completely.

For the topping, beat 75g softened butter and 125g full-fat soft cheese with 200g sifted icing sugar and a dash of vanilla extract.

Hi noogles,
My friend gave me this reiepe and I've made it twice. Its yummy. I think it may be Delia.

Preheat oven to 180*

In a bowl mix up 3oz marg
4oz caster sugar
1 egg

Sift in 8oz of Self raising flour.

In a seperate bowl mash 4 ripe speckly bananas.My ds helps with this bit.

Add bananas to mixture

Add grated lemon and orange peel/zest and a splash of lemon juice.

Put into a lined loaf tin and cook for 45 minutes till cracked on top.!!!

When I made it first I realised I didn't have a loaf tin or greaseproof paper after I'd made all the mixture, so I used a pyrex dish greased with butter. it worked fine! Oh and I forgot to sieve the flour. Oh well it tasted nice with a cup of tea. Good Luck.

Oh no no no princessmel, you are not too late at all, i would like as many recipes as possible so we can try them all out and see which we prefer. So thankyou very much and I like the fact that you can pop raisins in too xx

You can put chocolate chips in if you want too! They are both yummy and its so easy.

I use the one from Nigella's Domestic Goddess book. Fab. When banananananas are past their best for eating, I peel them and stick them in the freezer specifically for baking banananana bread at a later date (you need to drain some of the liquid off once defrosted and before using though)

Nigella's banana bread

100g sultanas
75ml bourbon/rum (I've used apple juice sccessfully though!!)
175g plan flour
2 teaspoons baking powder
half teaspoon bicarb
half teaspoon salt
125 g butter (melted)
150g sugar (brown sugar of any variety gives a better flavour IMO)
2 large eggs
4 ripe bananas, mashed
60g walnuts (I've never put these in)
1 teaspoon vanilla extract
loaf tin, buttered and floured or lined with greaseproof paper

put sultanas & rum in saucepan, bring to the boil and leaave for an hour or until the liquid's mostly been absorbed. This plumps up the sultanas. Drain.

Preheat oven to GM 3 170 C

Put flour, baking powder, bicarb and salt in a bowl and mix.
In a nother bowl, mix butter & sugra and beat until blended (or use a mixer!!) Beat in eggs one at a time and then the bananas. Stir in walnuts, sultanas and vanilla. Add the flour mix 1/3 at a time, stirring well each time. Scrap into loaf tin (I've had to pour it on occasions!) and bake in the middle of the oven for 1 - 1.2 hours. Leave in the tin to cool.
