What HEALTHY thing can I make with millions of apples?

Our apple tree has really delivered this year. Have made gazillions of yummy crumbles, but trying to be vaguely healthy (gaaaaaah). Any ideas of what I can use them for? Wondering about making a compote with xylitol rather than sugar (to stir into yogurt etc.). Anyone have any brilliant ideas?

Are your apples definitely sour? Our neighbour always added sugar having never tasted her apples raw, they were delicious & didn't need sugar.

They are eating apples so maybe you're right and they don't need added sugar anyway. Am going to do a test compote batch now and see how it turns out!

Americans seem to make apple butter a lot (sweeping generalisation), and I was wondering about making some as I have loads of apples too.

Thing is, I don't really know what you do with it.

Not sure about healthy but it's definitely delicious and a change from crumbles - I recently did a recipe for Apple & Blackberry Cheesecake...

Other than that, how about green smoothies for breakfast everyday? :)

I made apple butter 2 years ago Spotted - a lot of hard work, and being an american thing , miles too sweet/ too much cinnamon etc, ( sweeping generalisation also!) even though I cut the quantities ( and I used bramleys) - had to mix it with ordinary apples in apples crumbles and things to use it up.
If they are in good shape, no bruises and cuts ,you can wrap them in newspaper lay in a tary and they should keep well for a month or so in a cool dry shed/room

Could just be that dd is odd, but she loves them just baked in the oven till they're soft. Nicer still if you core and put raisins in. If that's too bland a tiny drop of honey or syrup on the raisins is lovely.
In stews and casseroles, particularly pork/ sausage. Pork and Apple kebabs too.

You could just store some. Choose only the perfect apples with no bruising whatsoever, wrap individually in newspaper and store in a cardboard box in a cool shed/garage. They will keep for weeks or months.

What are they, only certainly type f Apple will store and these are generally later varieties which wouldn't' the ripe yet.

I'm in the same position. I have two boxes in the garage and have filled a drawer in the freezer with blanched slices. Will be picking more boxes later. Am minded to put them at top of drive and ask for small donations to be put in mail box for Macmillan. Otherwise just for folk to take rather than see them wasted.

We have a small orchard here and must get more organised next year. Anyone else getting bitten badly by mosquitoes every time they go to the trees to pick?

Oh and so far we've had an apple flan, pork with apple sauce, pork casserole with apples, tarragon and cream, apple pie with almond sponge topping and today I'm doing apple amber. Apples cooked with juice of lemon, cinnamon and two/three egg yolks (if you put yolks into the hottish mixture they cook without crambling) and top with meringue and bung in oven for 45 minutes.

We haven't picked ours yet but we have got loads too.

I'm going to use most of them to make up apple sauce for the freezer as its used as a substitute for other ingredients in healthier baking recipes. For example, my DP has a cook book for cyclists and there's a good recipe for wholewheat pumpkin muffins in there which uses apple sauce. I think a lot of American recipes call for it too.
