I once had it grated and mixed with mayo i think as a salad but it was over a decade ago and i couldnt cook then.

is it likely to have been cooked?

does it need to be cooked?

what would you do with a celeriac anyway?

urgent replies welcomed

soup ! you;ll have to google for a recipe...my grandma used to make it!

CantSleepWontSleep · 28/11/2006 16:30

Hmmm - not my fav veg, so the only way I tend to use it is mixed with fish (and sometimes potato) to make fishcakes.

Cut it into chunks and roast in the oven with other winter veg - Delia has a recipe for it.

Hugh Fearnley-Whittingstall was waxing lyrical about it in the Guardian last Sat.

Chop into chunks, boil till soft, and then mash. Can be mixed with potato and then mashed, but cook separately in that case, as I think they cook at different rates, and you might end up with little chunks of not quite cooked celeriac in your mash (not good). Very yummy.

Chop the root vegetables into largish chunks. Turn the oven up to about 200 degrees and heat some oil in a roasting pan. Add some herbs or spices to the oil (rosemary and thyme or cumin seeds) roast the vegetables for about 40 minutes. Take them out, add the mushrooms and red peppers to the pan. Roast for 10 minutes or more then lay the bacon on top to cook. The fat and juices from the bacon will drip amongst the veg making them very yummy. Whole cloves of garlic in their skins do really well in this, they go all caramely, but don't add them too early or they'll burn.

Sometimes I squeeze orange or lemon juice over in the last 10 minutes to get a sticky/sweet effect.

rebelmum1 · 28/11/2006 16:44

i like it finely grated, raw with mayo mustard and lemon dressing.
