my mum used to do it with brown sugar and cloves - very sticky and totally delicious

madmarchare, hte only people I know who do a ham are Irish or of Irish descent. Is that true, or is it just the people I know?

My mum's bf does one like Binker. It's a ritual in their family!

another vote for Nigella's here - keep the stock and make the black bean soup with it.
The ham and soup are both amazing.

I spike my ham with cloves. Then cook in oven basting every 20 min or so with a mixture of honey (1/2 c), brown sugar (1/4), mustard powder (1/2 tsp) & a little apple juice (1.5 Tbs). Those are the quantities for a 750g ham.

Boiled in cider or else Nigella's recipe with it done in cranberry & apple juice, cinnamon stick etc. Both lovely. Cider particularly nice.

Boil with peppercorns, cloves and bay leaf.

Take of fat, heat some orange juice, honey and mustard pour over ham and bake in the oven at gas mark 5 for about 30 mins.

Pour of liquid thicken with cornflour.

soak overnight in cold water, pour water away, add fresh cold water. Boil for 20 mins/lb. remove, peel off skin, score in a diamond pattern, add cloves at every cross, drizzle with homey or brown sugar and bake off in the oven - yummy
am 1/4 irish, Dh 1/2 irish - is it really only those with irish antecedents who cook ham ?, it's yummy stuff

I just do it in water in the oven, with some soaked yellow split peas in muslin beside it, to make pease pudding.
