Quick stir-fry sauce ideas, anyone?

DH loves his stir-fries but I'm getting a bit fed up with all the gloopy packet sauces he puts on them so I was wondering if anyone had ideas for a quick but more flavoursome equivalent?

(I used to do a lovely Thai green curry when Delia and Jamie were making them on tv and Sainsburys had all the ingredients in stock, but can hardly ever get the fresh lemongrass, kaffir lime leaves etc these days ).

Tbh all I put on my stir fries is some chinese five spice, chilli powder (or fresh chillies) and either ground or grated root ginger and soy sauce to taste.

A quick cupbaord one is soy sauce, lemon/orange/lime juice, honey, tomato ketchup, tiny bit of oil.

Put in the quantities you want really, depending on whether you like it more sweet or sharper etc. Tastes quite good.

Ledodgy, that's more or less what I'd do if I was doing it for myself I think, but dh likes his gloop

yeah mine's a gloopy one! but it does taste a lot less chemical than a packet one (which all taste the same).

take thai chili sauce and dilute it with water.

also, add a drop of sesame oil to the peanut oil while stir frying to change any of the other sauces you fancy.

Change of oils is a good idea, Kiskidee - maybe that's part of why I'm so bored with it.

Yes they do taste all the same, ADad - dh always asks me which one I'd like but frankly the difference is pretty marginal

thai chilli chicken and basil
coconut cream, onion, fresh basil, chilli, fish sauce, diced chicken - delicious - takes about 10 mins!

If you like slightly gloop,then mix a teaspoon of cornflour with some water,sherry and soy and then throw that in after you have fried up everything else.

Good flavours for stir fry are fresh ginger, lemon grass, teryaki sauce, soy sauce, garlic, oyster sauce and sesame oil. I tend to quite haphazardly splosh a few of these in whilst cooking.

From Jamie's 5 minute wonders - we have this at least once a week!

1 thumb sized piece of ginger per person
1 red chilli per person
1 x chicken breast per person in slices
(add those 3 to hot olive oil and brown chicken)

Then add a teaspoon of 5 spice per person, a dash of soy sauce and a tablespoon of runny honey per person ( careful to not let the honey get too hot as it will quickly burn)

Add to cooked noodles and away you go. Yum

Something superquick is to fry stuff in sesame seed oil or add a mixture of soy sauce and sweet chilli sauce. It's yummy and easy.

Similar to one below but thought I'd add it anyway :

Make up a chicken stock cube, add 1tbsp each of soft brown sugar, soy sauce and cornflour.
