Type of fat for roasting?

I always use vege oil or similar for roast veges, potatoes and meat but sometimes find they come out a bit oily - anyone else have that problem, or use a fat that doesn't do this?

It might be that you need to get the oil hotter before you put the veg etc in.

However, have to say - i ALWAYS use lard when doing roast potatoes. I dont do them that often though.

i always use lard but dh says his mum always used goose fat and the potatoes were delicous

i use a mixture of butter and olive oil (olive oil stops the butter burning). and make sure you get it good and hot before putting the food in.

and my roast spuds are the best
