Right, firstly - I'd like to stuff a butternut squash......

any easy recipes anyone?

ALSO - I have some red lentils, and some green lentils and would like some recipes using those (not soup) please?

Hmm,I would roast or do soup.
Stuffed vegetables are very 70s.

For red lentils...

Fry ginger onion and garlic-slowly.
Add good curry paste
Add lentils
Add tin toms and tin of coconut lilk.
Simmer but keep stirring/adding water as it will 'catch'
Serve alone or with rice and a tomato/cucumber/chilli/pepeer/coriandere smabal.

For grenn...

Simmer and drain.
Mix with fresh thyme and vinaigrette.
Toss through crumbled fetta and something green like peas or asparagus.

I roast / bake the squash by cutting in half, scooping out seeds and rubbing with olive oil or butter then wrapping in foil. When cooked you can serve in the skin for people to scoop out the flesh. I co-incidentally usually serve this with a red lentil sauce, as it goes so well

Fry onions and mushrooms, red pepper if you have one, until soft, then fry the red lentils for a few minutes, (add spices if you like them at this point - garam masala or cumin is nice) and add stock. Simmer until tender and smooshy. Serve poured over the baked squash, or alternatively with rice, quinoa or bulghar wheat.

how much stock? about double the quantity of lentils?

Erm

More than that I would think. Just add about double to start with and then add more in as you go. It's a bit like cooking a risotto, I keep adding more until the lentils are tender and the liquid is almost all absorbed. You are aiming for a consistency like thick soup, with the lentils fairly broken down rather than still in discrete lentilly shapes.

You can add other root veg at the beginning, too - parsnips or carrots in small dice are good, or anything you have in the cupboard.

it was just because I wanted to make a whole meal out of it rather than roast it adn do something else on the side.

I also wanted to get rid of some of my angst at being screwed over by the banks and the IR
