ok so I'm ditching cereals need ideas

dd2 is starting school so I no lo ger have the leaving early for nursery excuse to keep hold of the breakfast cereals they generally eat well so I could cope with the "box of shit" idea up til now Wink

however now I will have slightly more time in the mornings I would like to start making more effort with breakfast

I already have eggs down but dd2 wont eat them. We are working in on letter though so hopefully she will start to.

She also isn't keen on.porridge Hmm

although I'm hoping that once there's little choice in the matter she will cave. and she did at one point eat almond porridge. I plan to toast nuts and maybe use the slow cooker to make fruit comps to liven it up a bit.

so besides porridge, eggs, and breakfast sundaes with yogurt and home made granola and waffle/pancakes I'm a bit stumped.

so any ideas gratefully received. oh and preferably dairy free

I make and freeze the pikelets from this recipe we have with butter and jam and a nice big splash of full fat greek yog after, I honestly don't feel hungry before lunch I think its the lack of sugar only a bit in the scraping of jam, sugary foods do make me feel hungry again earlier.

Another fab idea thank you. spotted the muffin recipe too. mmmmmm bacon muffins. If they freeze well I can get cracking next week with those.

We like pancakes made with one banana mashed mixed with one egg. Add a little almond or cashew butter then fry in the pan. You can't taste the egg as long as you do a one to one ratio but high in protein so will hopefully keep them full. We eat them with fruit or yogurt and a little honey on top

Plain Greek yoghurt with cold fruit compote (or stewed apple, whatever), with or without a sprinkling of granola.

Banana and peanut butter "ice cream".

Bacon sandwiches.

Oat, yoghurt and berry smoothies.

Breakfast burritos: cheese, beans, spinach, and scrambled tofu (or egg if they'll eat it) in a wrap.

We have ditched cereal because no one seems to want it any more so we have, american pancakes at the weekend, bananas, melon, brioche, banana and frozen fruit smoothie, usually mango. Bacon wraps, houmous wraps, boiled eggs. Toast.

My favourite at the moment is two figs, cut in half and a drop (literally a drop, less than half a teaspoonful over all) of honey on top, under the grill for about 3 minutes and about 3 big tablespoons full of natural yoghurt. Not too sweet and surprisingly filling! Figs are in season at the moment too!

My past favourite were breakfast burritos, similar to the above but I would cook a batch and freeze them so Omlette, tinned beans, dollop of salsa and grated cheese. So yum!

oh ranch eggs/huevos rancheros is one of DH's specialities! basically, fry up onions, green peppers, chorizo, (additional chilli if you want it really spicy) add chopped tomatoes and chopped fresh corriander, cook down a bit then serve with fried eggs and a dollop of soured cream and possibly some avocado if you have it. (makes a good lunch too!)

My 8 year old is always starving and the following breakfast fills him up ...

Handful of almonds
Sliced golden kiwi fruit and apple or pear
Big wedge of Brioche
Cubes of cheese
Peanut butter on toast

All a bit random but he loves it

Great thread Giles! I'm always wanting to mix things up for breakfast and to make it more protein heavy. I love the idea that these lovely things can be batch cooked and frozen for crazy mornings! So breakfast burritos can be frozen whole or in component parts? And I like the sound of breakfast muffins but not sure where to start with them!
