Hope you can help me mumsnetters! I've got another family coming over tomorrow evening for dinner. They are vegetarian and I found out today they don't eat fish either so my recipe for salmon-en-croute is out the window. We're not veggie, but obviously have to make something that is for them - they have 3 children (like me), so it can't be anything to spicy. I thought something warm and comforting like a casserole and rice - but have no idea where to start. If anyone out there has a tried and tested recipe for 4 adults and 6 children I'd be so grateful!

I have a veggie coming around tomorrow, and i'm sticking to a nice and easy veg lasagne... jacket pots, g/bread....

ilovecaboose · 17/11/2006 15:06

donn't ahve any myself but here is good site

Scaryfairy · 17/11/2006 15:10

We are veggies and this is our fav recipe. My kids love it and I love it cos it is so easy to make! For 10, you would prob have to double it.

I'm too lazy to type it out so here's a link to Good Food.

What about a soup - say butternut squash, followed by a mushroom (porcini v. nice) risotto, served with a salad, followed by poached pears or an apple tart?

CorrieDale · 17/11/2006 15:41

Veggie casserole with dumplings and jacket potatoes? Nice & easy. Although I'd be more than happy to eat ScaryFairy's tomato risotto, and I'm 7 weeks pg and off virtually everything!

Mumpbump · 17/11/2006 15:48

You could do a veggie/lentil/bean casserole for the adults and toad-in-the-hole with veggie sausages for the children if you're planning on cooking different food. Or use a meat substitute in a normal meaty recipe...

moljam · 17/11/2006 15:48

i would go for big veggie lasagne!im veggie and that sounds ideal for warm and comforting!

Cadmum · 17/11/2006 15:50

I was also thinking veggie lasagne. I have an amazing recipe for as asparagus one somewhere. Shall I have a look?

Iklboo · 17/11/2006 15:50

I'm not a veggie but love veggie lasagne cos it's so tasty - lots of peppers, courgettes, aubergine, mushrooms etc

KathyMCMLXXII · 17/11/2006 15:51

I'd go for lasagne as well because that's such a good one to do for large numbers - I love risotto but always find it hard to judge the quantities and would be worried about not havign enough for 10; also it would be quite hard work to keep that much risotto stirred.

Another vote here for veggie lasagne. Easy, v tasty and nearly all kids like pasta. Serve with garlic bread (or maybe cheesy garlic bread - yum!) and a nice green salad. For pud, a nice shop bought tart or lemon meringue pie if you can be bothered and ice-cream for the kids.

Karensara · 17/11/2006 16:32

can't beleive the amazing replies and so fast - you are all lovely! I think it will have to be lasagne too, but was trying to avoid that as my son hates anything to do with cheese/cheese sauce. I think I'll just have to make him pasta and veg sauce to keep him happy!

Delia's recipe for veggie shepherds pie is also very good, although it does have goats cheese in the topping, but you could always leave it out. If you like the sound of it, I will write it down. Or I have a recipe for a vegetarian nut wellington, which is along the lines of an "en croute" recipe, and can be made in advance, and bunged in the oven when required.

Iklboo · 17/11/2006 16:47

You could so veggie kebabs for the children - thread button mushrooms, cherry tomatoes, peppers, onion chunks etc onto wooden skewers, grill & serve with pitta breads & dips

oxocube · 17/11/2006 17:26

karensara, you could always do the lasagne with a white sauce flavoured with onion and nutmeg instead of cheese . Hope you enjoy your evening!

CorrieDale · 17/11/2006 17:46

ooooh, somuchtobits, can we have that recipe, please????? Sounds lovely for Christmas lunch.
