URGENT - help with chicken casserole!

I've got chicken, carrots, onion, celery. Also got tinned toms if that helps.

I'm ashamed to say I usually use a packet mix and don't know how to make casserole without

How can I make this tonight without a packet mix.

Oh have oxo cubes though

Any help much appreciated!!

Brown chicken + onion, add tin of tomatoes.
Chop + add other veggies
Add oxo cube + dash of worcester sauce(?)
Chuck in oven

fry the chopped onion in a little olive oil or butter, chop up everything else including chicken into biggish chuncks and bung in casserole dish, add onion and 2 oxo cubes, suirt of tomato ketchup and salt and pepper and some white wine if any to hand , then add water to approx 1/2 way up dish, lid on , in hte oven very hot for 1/2 hr then middly to low for aslong as you can wait, at least an hr , then drain liquid into spare jug and add bisto or similar gravey granules to thicken and bung back on and serve ...never fails and very low fat aswell and cheap ...our fave supper.

I don't like tomatoes in my chicken casserole to be honest

I'd brown chicken and remove from pan

fry onion, celery, carrots plus clove garlic
put chicken back in
cover with chicken stock maybe bit of mixed herbs and bake in oven for an hour

you can thicken sauce if you want with some cornflour

Agree with Twig, I too would brown meat first, then onions and other veg, put chicken back in with liquid (white wine, stock, tomatoes) and bung in oven for an hour.

Brownign it all seals in the flavour also stops you getting crunchy onions I find.

The sauce won't be thick though will it? I don't have cornflour

I didn't have cornflour either Gdg yesterday, so I used plain flour mixed with a little water and then stirred into the casserole and it worked okay...

When you brown the meat coat it a bit with plain flour first then you won't have to add plain flour in at the end so there's no risk of it going lumpy/bitty.

I just cooked that casserole on the link and it is really good. Just fed it to ds so had a bit of a taste.
I don't eat bacon etc so I left that out and used one veg stock cube and it was still delicious.
Those dumplings are really tasty.
I think dh will be very impressed.
