What does this do? I made a pear cake with yogurt in it yesterday, and it came out very well indeed. But I'm just wondering, is the yogurt a humectant? Or what?

i think the acidity in the yoghurt/buttermilk interacts with the raising agent, which makes the end product light and fluffy? The muffin book has something on this.
