What can I cook my (very lovely) vegan friend for dinner?

I have been having a friend stay for the last week. She is lovely and great to have around and all that She is vegan and so far we haven't had a problem as she has just cooked her own dinners etc (one night she cooked for me too and it was lovely) ... but I would like to cook her something and I don't know what apart from a very boring vegetable pasta sauce (vegetables with tinned tomatoes basically) with spaghetti.

Any yummy vegan recipes out there please?

vegetable paella
bean chilli - you can use soya mince/TVP mince in chilli too
stir fry (you can buy marinated tofu chunks
which go nicely in a stir fry)

I won't do anything with 'pretend' meat ... don't quite see the point in that if you are a veggie vegan

chickpea spinage and potato curry

Artichoke and green olive pie - not the cheapest, but pretty special looking and tasting.

big tin of artichoke bottoms
1oz marg
10 shallots
2 clove garlic
chopped thyme
chopped sage
a good slug of vermouth
1/4 pt stock
gound almonds to thicken
6oz good quality large olives
black pepper
+
1 packet of puff pastry (almost all brands are vegan)

Cook it all in a pan and sitr in the last 5 ingredients at the end. It needs to be fairly thick and creamy (the almond do this). Line a 8" loose bottom cake tin with pastry, pile in the filling. Put a pastry lid on and decorate with scraps of pastry. Cook at 190 C for 15- 20 mins

Serve with potatoes + veg, or cold with salad in summer

or anything you can make with mince, but use Puy Lentils instead and red wine + stock for flavour - tastes a lot more sophisticated than soya mince.

Haha have just noticed why Ghosty said Littleredhen. I thought 'veggie vegan Littleredhen' was some slightly insulting term for a lentilweaver .
Am in same situation next week hence looking at this thread. I was thinking a big vat of minestrone type hotpot on the stove, then non-vegans can add cheese or soured cream.

Vegetable curry. Use a bit of creamecx coconut in the sauce to give it a nice creamy consistency.
Pizza without cheese.
Bean stew.
Homemade vegetable soup with nice bread.
Easy to make a vegan dessert - e.g fruit crumble, using vegan margarine to make the crumble. Can make custard using soya milk. Fruit salad with vegan ice-cream.

tofu and vegetable stirfry with a sauce made from tahini, honey, soya sauce and chilli. Serve with rice.
(think that's be vegan)
We had it for dinner last night and I took the leftovers to work today. Totally Yummy (and we like our meat round here!)
