Any good vegetarian soup recipes

as I'm fed up of the same old ones and last time I made veggie soup it was a bit bland and tasteless.

So need some new tasty soup recipes, I will eat anything veggie/bean/lentil like, am also looking for a great lentil soup recipe not involving bacon?

Here's one from Food For Thought cookbook (from memory) Put a cupful or so of green split peas to soak overnight. Next day, using big soup pot, fry some onion and garlic. Add chopped carrot and celery, fry a bit longer. Add the drained green split peas and 2 pts water or stock (veggie stock cube will do). Simmer for an hour. Add ground coriander, garam masala, and if you like it hot, chilli powder. Also add chopped leafy green veg eg cabbage or spring greens and continue cooking until seems wilted - a minute or two, I don't like them overdone. Turn off the heat and give it good old whizz with the hand held blender. Apols to FfT. Pls don't sue me.

Chestnut and sweet potato soup

Ingredients:

1.3 kg Sweet potatoes (Approximately 3 potatoes), peeled and roughly chopped into small pieces
2 tablespoons olive oil
2 red onions, peeled and roughly chopped
4 cloves garlic, peeled and finely chopped
1 teaspoon dried cumin
2 teaspoons dried cinnamon
200g Chestnuts, cooked and peeled (Vacuum packed or frozen are ideal), roughly chopped
1.5 litres vegetable or chicken stock
Salt and freshly ground black pepper

Garnish
Sprigs of parsley, finely chopped

Method:

Heat the olive oil in a large saucepan. Sauté the sweet potatoes, red onions, cinnamon, cumin and garlic for 5 minutes. Add the stock. Bring to the boil and simmer for 20 minutes.

Taste and season accordingly. Transfer half of the soup into a liquidiser or food processor and whiz together. Return this to the saucepan and reheat when ready to serve.

To serve the stylish way: Serve the hot soup in warmed bowls with sprigs of parsley.

here's her lentil soup recipe copied and pasted... i did it without adding any cream and it was lovely

It's dead easy, you don't need a recipe, just -

2 carrotts, chopped
2 onions, chopped
2 cloves garlic, chopped
large piece of ginger chopped
a chilli pepper, chopped
1 red pepper, deseeded and chopped

Sautee the above gently in some oil for about 3-5 minutes
Add -
About a cupful of red lentils
a teaspoon each of ground cumin and coriander
a tblspoon tomato puree

Sautee for a few more minutes and add about a pint of veg stock, cook for 20 minutes and puree with a handheld blender. Season with salt and pepper and serve with a big dollop of creme fraiche.

All those measurements are approximate! Have Fun!

Here is my tomato soup that my son claims is better than tinned (what an accolade!)

-chop and saute couple of onions for good 10 mins

-turn up heat and add a teaspoon of sugar and 2 teaspoons stir and fry briefly to carmalise some of the sugars

  • add 2 tins of plummed (not chopped) tomatoes and two tin worth of water
  • simmer for as long as a piece of string - well at least 15mins
  • whizz with a blender thing until consistency you like
  • taste and then season accordingly

I add garlic / oregano / chicken stock - whatever is around

Works as good store cupboard meal.

Fatthighs I am puzzled by your name. Surely thighs are meant to be fatter than the rest of the leg? Also, if thighs are not thick enough, baby drops through when dandled. Perhaps I am being too literal, and it's just your favourite cut of chicken

my name is fat thighs as it is nice and descriptive - also most other names I chose were already picked.

Am glad I have fat thighs as means less fat around my vital organs and means I don't get a sore bot sitting on a wooden chair.

Also is a good cut of chicken.

So if we a re being literal with names elasticwoman......

Well, funny you should ask. I was named Elasticwoman by friends after I gave birth to a 10 lb 6 oz baby and needed no stitches. It was a waterbirth. I envy your fat thighs though. I don't think mine are fat enough, although when a child I seem to remember my dear brothers calling me Thunderthighs. They were all beanpoles, but now due to middle age spread are mostly fatter than me ha ha ha.
