Need to cook a 'fancy' joint of meat

We don't have big chunks of meat very often, we hardly ever even do a roast! But we have some people over for dinner soon who are big meat lovers, and I want to try to do something which they will like. And it'll be something new for me. I have a slow cooker so can use that if necessary - anyone have anything I can try?

What's your budget? There's a Jamie Oliver recipe with fillet of beek rolled in porcini mushrooms and parma ham which is bloody amazing. A fillet joint does cost though.

Beef wellington is pretty tricky IME. It can go really well, or it can be a disaster.

I like the jamie oliver lamb recipe when you cover the lamb in mint and coriander yoghurt and then place the meat straight onto the oven shelf and let the juices drip onto the roasted veg cooking beneath it. Its always been a hit here and isn't difficult.

This time of year, roast leg of Welsh lamb, serve with new potatoes and fresh peas. Asparagus with hollandaise sauce as a starter.

I would do a leg of lamb, they are very very hard to get wrong.

I do mine in a huge roasting pan filled with potatoes, carrots, parsnip and any other root veg you like - celeriac works well - handful of thyme, onion, lots of black pepper. Pour a bottle of white wine over it all, and half a wine bottle's worth of water. Fan oven on 150 - leave it alone for 5-6 hours, eat with crusty bread and some greens.

Or, I just roast it with rosemary and serve with new potatoes and green vegetables as allalone does.

5 words -dont do rib of beef!
I love it and cook and eat a lot of meat but it can be nerveracking to cook. I agree with above lamb is easiest Alibabs recipe above sounds ideal or a slow cooked shoulder over beans and tomatoes

I do a leg of lamb wrapped in several layers Of baking paper and foil
Add some olive oil, whole garlic cloves, salt and pepper and lots of fresh coriander
Bake on high for several hours - 3-4 at least
Serve with new potatoes, roasted medderatanean veg, Greek salad, crusty bread etc

I second a leg of lamb, I like this 7 hour recipe, absolutely fabulous and perfect for meat lovers, plonk it in the middle of the table & they carry on pulling more away for an age!

this Tom Kerridge recipe is really easy and delicious.
It's easy enough to do if you don't normally cook roasts.

Thanks for the replies, am going to google everything tomorrow and have a bit of a practice at the weekend.

Twelve budget can be unlimited as this will be a bit of a one-off!
