Best easy, healthy cakes/muffins/flapjacks for lunch boxes?

Trying to be healthy and tried various recipes found on google, but generally disappointing; dry and don't rise well.
I have been cooking them in a halogen oven; could that be the problem?
Has anyone got any good ones that they use that actually work?

They're not cakes as such but I've made oat balls before that are basically oats, mashed banana, cinnamon and raisins. They're the easiest thing to make - you just eyeball the ingredients until the mix is steady enough to roll into balls, and then bake for 10-15 mins.

They're not that sweet though, so you might want to add a little honey to make them a bit more dessert-like Smile

Sounds good; we like not too sweet. Would you bake them low and slow or hot and quickly?

Banana muffins work well. I use about 8oz flour (usually half white, half wholemeal) plus 2-3oz oats either rolled or medium oatmeal. 2 tsps baking powder. Can add some cinnamon or replace an ounce of flour with cocoa powder. Then in another bowl mash about 10oz ripe banana, beat in an egg, a couple of oz light olive oil(or other veg oil) and maybe a couple of oz sugar or if you want equivalent Splenda. Fold that into the flour mixture just enough to wet it all. Add a bit of milk if it seems too dry, it should be quite soft but not runny. You can add various things to this mix - sultanas, chopped dates or prunes, choc chips, diced apple, fresh or frozen blueberries or raspberries. If you use fruit make the mix stiffer else they end up too moist. Spoon into muffin cases and bake 20-25 mins in oven preheated to 180c.

I recently discovered that if you find a load of discounted bananas, then you can slice and freeze them perfectly well - I've been knocking a few chunks from the bag into my porridge of a morning, but I think they'd bake fine too

These flapjacks are really easy and nice. Just chop and change the fruit and nuts.

I've done those yogurt-oat ones - they were sort of 'puddingy' but nice.

We often have a few bananas which are riper than anyone wants to eat, they get sliced and frozen.

The other thing you can do with them is stick in a food processor with a spoonful of nutella, process till smooth - instant pretty healthy icecream. I think that was one of CMOTs too. (she really doesn't live up to her fictional name! Grin)
