I accidentally bought 'half a salmon side'...I have no idea what to do with it! please help me do it justice!

OMG! Not sure how I managed to do this...(I going to have to blame looking at the picture but not reading the words on the ocardo website). Anyway I have over a foot of salmon in my fridge.

What am I supposed to be cooking and can I get away without a fish kettle? Is there a good recipe that I can follow.

We bake it in the oven and have baked salmon and minted new potatos for dinner.

Followed by salmon sarnies for the dc's lunch the next day and a salmon salad for me.

If there's any left it goes in a fish pie for dinner.

Cut it in half.
Oven bake half of it (I'd wrap in foil, and cover in butter and herbs).
With the other half, cut into portions, and freeze for use in your normal recipies.

You could make gravlax- Scandinavian cured salmon, dead easy and delicious.
Salmon en croute- a bit 80s but still really tasty
Agree leftovers for pie, or just divide some/all into smaller fillets.

What they said! It's incredibly easy to cook. I put a big bit of foil over a shallow baking tray and put the salmon on that, wiping it with a bit of kitchen paper first to dry it off. Then I sprinkle a bit of cajun spice on it, but salt/pepper/bay leaves/lemon slices is also lovely. Pull the foil up and crinkle the edges together to make a kind of tent round the salmon (doesn't matter if it's a very flat tent!) and bake for maybe 25 mins at a fairly high temperature (200?) Then check to see if it's cooked in the middle. Lovely moist salmon and if you're only feeding 3-4 people, especially if some of them are little, there will be lots left over for other things. You can freeze the cooked salmon if you want to. Happy eating!

Just poach it and eat it as it is, on a big plate with one fork! Salmon is beautiful.

I think I could just do that shelagh, although I probably ought to share it with DH!

Thank you for the idea! Just it was a bit of luck, I thought I was buying smoked salmon which is a bit embarrassing. I think this will work out better though.

I buy Salmon like this as it usually works out cheaper than fillet portions.

I cut it in half. Half will feed for of us very well. I then cut into portions uncooked and freeze half and cook the other half.

Serve with white sauce, watercress or green veggies and baby hersey royals! Yum!

I've made Red Thai salmon curry a few times - salmon makes good curries because its not quite as delicate as some fish

Salmon mousse is lovely too, you just very gently steam or fry it. and remove any bones, then mash or liquidise it into some cream cheese with plenty of lemon juice, salt and pepper, a bit of butter or olive oil and tarragon and serve in a pretty bowl and or freeze it.

I'd cut into fillets, great recipe from Jamie Oliver's 30 minute meals suggests popping a pack of asparagus in a baking tray, lay salmon fillets on top then open a small tin of anchovies, drizzle the oil on top of salmon and asparagus and lay the anchovies along the salmon, quarter a lemon and give it a quick squish over the salmon before resting the chunks alongside the salmon, he also says scatter a few small cherry tomatoes about (but I'm not very keen on tomatoes) bake in hot (200deg c) oven for about 20 minutes. Serve with new potatoes.

Can I ask what you paid for it?

When I was a student I worked on a fish bar and sold a whole salmon. He'd only come in for two fillets. I'm interested in the difference in price in 25 years.

the sides of salmon are great value compared to the prepacked fillets.

I sometimes do this with a side or the fillets....set the salmon in a dish scatter over a few bits of finely chopped chilli, and spring onions and grate over some ginger

squeeze over some lemon or lime juice, shake over some oil and some soy and let the whole lot sit for a bit. I usually leave it out of the fridge since it's nicer cooked from room temp

to cook you set it on a really really smoking hot griddle, skin side down until the salmon looks halfway cooked, then I turn off the griddle and flip it over, the skin will be black and the top will cook inthe residual heat

Serve with noodles or pasta, add in some chopped coriander leaf or chives or parsley.

Ocado do half a salmon on offer for £12. Or four salmon fillets for... £12.

I do mine in a foil parcel with sweet chilli sauce, crushed garlic cloves, bit of ginger (one 'cube' from the freezer), light sprinkle of 5-spice, soy sauce and sesame oil. Tastes great, the sweet chilli gives it a delicious glaze. It's also good on the bbq like that.

We buy salmon from Costco so it is always a whole side of salmon Grin

I lay two chopping boards on the worktop and cut it into fillets. I put two fillets into a zip lock bag, lay it flat, seal the bag, make sure they are separate ie one fillet at the top of the bag and one at the bottom and I actually fold the bag in half so the salmon fillets sit on top of each other.

Then I freeze them all. The separation means that when you come to defrost them they defrost quicker because they are frozen as individual fillets rather than one lump of salmon. Plus if you need an odd number you can remove one easily without hacking two frozen fillets apart.

The same applies to chicken breasts. Mince, I flatten out in a large ziplock bag so that it too defrosts fast. Plus it is easier to stack upright in a freezer that way.
