Have you got a really good chocolate mousse recipe?

Google isn't given me anything really rich & silky, I'm looking for a dense flavour rather than anything light & airy.
Any ideas?

Thanks Oldbean, I haven't got enough ramekins for 8, do you reckon it would be OK in a big glass bowl? Should I make double?

Second Delias one - I did her chocolate Creme brûlée one and it was very rich and chocolatey, not airy at all

get some good chocolate and make this one

you need a large bowl filled with ice though, and to remember you are not whisking it thick, you are whisking it cold....will make sense once you do it.

if you haven't ramekins I often put mouse into small cups, espresso cup are very cute, but if you are greedier then a small teacup will suit. :o

The Guardian do a brilliant series where they test lots of top chef's recipes for a particular dish and select the best one. It's foolproof. The perfect recipe for dhal is awesome. As is this. It's delicious - dense and chocolatey but moussey - not a chocolate pot but a proper, intense mousse.

Really simple recipe is one egg and 1oz choc (for me that would be dark espresso chocolate) per person. Melt choc over hot water. separate the eggs. Mix the yolks and add to cooled choc. whisk the whites and gently combine the two and chill for a couple of hours. It's light but rich and silky at the same time.

just spotted my typo ...I have never put a mouse in an espresso cup.

...mousse is lovely in them.

I put Nigella's mousse into small glasses. I bought a load at Ikea just for the job.

Just 60g good plain chocolate for each egg and per person. Just separate the eggs, mix yolks with melted chocolate and fold in stiffly-beaten whites.

Add some brandy, whisky, Cointreau etc if you want.

No need to complicate with sugar, butter, cream and all sorts of extraneous things.

Reporting back. I made 2 lots.

Nigella's with marshmallows & a combination of G&Bs dark & milk chocolate was a massive hit with the DC. It was very sweet (probably the milk chocolate which she doesn't really advise.

Felicity's (Guardian) with 70% G&B, which is more traditional was definitely the adult's preference. It looked really pretty in espresso cups with a few raspberries.

No clear winner, will use both recipes again.
