Make ahead pudding that can travel?

We are visiting friends on Saturday who love about an hour and a half away and I need to take pudding ; we will be going first thing so I will have to make it on Friday.

We will be 4 adults and 7 kids aged 2-7. I'm a decent cook, I don't mind making something that takes time, and the only dietary requirement is that it can't include coconut.

Any suggestions ?

A cheescake would travel or a cake based pud such as a choccy roulade. Perhaps a summer pudding and you could just turn that out on arrival.

profiteroles? Just assemble when you are there.

Lemon meringue pie woulld travel well. Banoffee pie goes down well too.

Pineapple upside down cake, Tarte Tatin, Rhubarb Crumble?

pavlova - just put together when you get there, or just strawberries and cream?

A giant shortbread base which you can make before you go, with elderflower cream and berries that you dollop on the top when you get there?

Summer pudding

Eton Mess - take the things separately

I also love the big creme brulee in Nigella Lawson's book - but may not be big enough - the family fight for it in our house :)

I did a key lime pie once that travelled well. Just made up the cream when I got there. I think it was on the good food website.

This was it. it says you can make it and chill overnight.

I am quite partial to a Bakewell tart. Bit of a faff, but can look fab on the plate and it isn't chocolate...

Great suggestions everyone! I'm going for a banoffee pie (which iPhone auto correct wants to call a vampire pie, which would be...different) but this has been inspiring for future puds, thank you!

Fruit tart? Sweet pastry base, creme pat filling and fruit brushed with apricot jam glaze on top? Good recipe on joyofbaking.com.

Or a pavlova - you could bake the meringue shell beforehand and just take along fruit and cream in separate pots for putting together just before eating.
