Ideas for Cub Chefs Badge

I need to do a two course meal for my Cubs but as one is Muslim and requires Halal meat I thought I would play safe an go down the egg route. (I don't / cant buy enough chicken locally for just him and we have fish phobics in the pack).
Any ideas that can be done in 20ish mins.

We will also be making waffles with banana and choc sauce as our desert/small cakes item.

We did the Beavers badge so slightly easier but made pasta with tomatoe sauce and grated cheese. Could you have a boiled salad as a starter. Very 80s but fits in with the healthy eating aspect.

why not something vegetarian that everyone can eat? pasta and sauce, risotto or veg chilli in wraps?

Huevos rancheros? Some recipes contain chorizo but you can leave that out and it's still delish

Merly when we did the Chefs badge just before Christmas we split into five groups and each picked food from a different region. I had the vegetarian group and we made Ottelenghi's vegetable paella, it went down really well with everyone and Nigel Slaters simple winter fruit salad with brandy snaps as our groups dessert.

Another group made Good Foods Quick Lamb Biryani and Mango Lassi, there were fajitas, spag Bol and a fish dish too.

The parents came at the end and we served it all up as a banquet with tables down the middle and everyone could try a little bit of it all.

Also if you have a local Muslim community you may have some Middle Eastern grocers around, these tend to have their own butchery counter and are much cheaper than supermarkets for meat, veg and spices. I do lots of my shopping at ours, a much wider variety of ingredients to choose from and my bill for two groups, mine and DHs, is normally cheaper than only one of the other groups.
