Duck eggs, anyone know what to do with them?

I bought 3 duck eggs yesterday from the market, and am looking for ideas of what to do with them!

We used to keep ducks and used them just the same as the chickens eggs.
They are 'richer' though.

Salted duck eggs the Chinese way...preserve them and leave them to soak in over saturated /crystallised salt solution for 4 weeks minimum.

they hold air better than hen's eggs - so anything that you need to whip will be better with duck eggs. Soufflé, sponge cakes, meringues etc. I understand professional cake bakers often use duck eggs for that reason. We used to have ducks as well as chickens and ate the eggs as normal. Well we still do have ducks, but one is 16 and past her laying days, the other is a male Grin

Thanks everyone, some great ideas! One more question, how many chickens eggs to one duck egg please? For recipes that state the number of eggs to be used? I guess for a cake I'd weigh them.
