Chicken Curry

I've got loads of chicken left over from todays roast.

I want to make a basic curry, got some bits in but not sure where to start help!!!

Not too hot as children 2 & 4 yrs eating also!!

I have always been a Jar person I am afraid but got told a secret one day about putting a large tablespoon of Branston Pickle in with any, balti, jalfrezi etc sauce you can buy, the difference it makes is amazing! t makes it taste home made so all you do is add some extra onions and mushrooms and Voila!!!

thought I'd post it here instead in case anyone else wants to use it. It's from UKTV Food.

Servings: 4
Level of difficulty: Easy
Preparation Time: 25 minutes (RUBBISH! 5 mins more like)
Cooking Time: 15 minutes

Ingredients
2 tbsp corn oil
2 Onions, cut into 6 wedges
3 garlic cloves, shredded
1 tbsp hot curry powder
2 green chillies, finely chopped
1/2 tsp Paprika
2 tsp cumin seeds
1 tsp ground cinnamon
4 x 180g chicken breasts, skinned, cut into 4cm cubes
2 Tomatoes, chopped
1 tbsp tomato puree
25ml water
75ml coconut cream, tinned
1 lime or lemon, grated zest and juice
coarse salt and freshly ground black pepper

Method

  1. Heat the oil in a large pan over a moderate heat, add the onion and cook for 2 to 3 minutes.
  1. Add the garlic, curry powder, chilli, paprika , cumin seeds and cinnamon , and cook for a further 2 minutes, until fragrant, stirring continuously.
  1. Season the chicken breasts with salt and pepper and add to the same pan. Stir well to ensure the chicken is well coated with the spices.
  1. Add the tomatoes, tomato puree and water, and cook over a high heat for 3-4 minutes.
  1. Pour over the coconut milk and simmer for a further 2 to 3 minutes.
  1. Stir in the lemon zest and add enough lemon juice to sharpen. Serve with boiled rice.

I use medium curry powder.
If i dont have the chilli then i just use chilli powder.
I use half a tin of chopped toms instead.
I use a teaspoon of cumin powder instead of the seeds.
Because you add the coconut cream at the end it means it isn't piping hot so you can serve it to the little ones straight away.
As your chicken is cooked you can obviosuly adjust your timing re that stage.

I've yet to find a child/toddler who doesn't like it. You can add moe or less lemon/lime and coconut to suit your tastes. I probably use more coconut cream than they suggest

I've been looking for an easy chicken curry recipe for ages!!
I try to cook everything for dd from scratch - but curry is the only thing I cheat at and buy made already

now for a silly question - is it freezable (presuming the chicken is fresh etc)

fry garlic onion, celery, cumin seeds, cardoman pods, turmeric and flaked chillis
(this is a basic masala)

add meat and veg

I add broccoli, carrots (pre cooked)
and other in season veg

and a bit of water

bring to boil and then simmer

add cornflour mixed with water to form a paste just before serving to thicken it

I've freezed it yes, before the coconut cream stage though if possible.
