Stuck in a rut, really need some meal inspiration

I have 3 DC, and feel like we're completely stuck in a boring food rut. They all have their fussy moments and while I try not to let that stop me giving them anything, it's pretty dispiriting to make meals that no one eats and end up in the bin. So we've slipped into a rut of pizza, pasta, chicken/potatoes, fish fingers, sausages etc.
The only veggies they will all eat are sweetcorn and broccoli. And at the moment we are renting and stuck with a v.small kitchen so hardly any room for fresh food storage.
I want to start meal planning but need some inspiration on some new meals to try out on them.

I sandwich brocolli and sweetcorn in between two layers of macaroni cheese.
Try meatballs with sweet potato mash/wedges.
Tomato soup with croutons.
Beetroot mashed with potatoes makes pink clouds, you know?
Eggy bread
Boil some rice and mix with peas, capers, tuna, roasted peppers, olives, add some lemon juice.
Lentils and rice
Parsnip and potato soup
Make your own tomato sauce to add to spaghetti, you can put anything in it, blitz to pulp.
Our menu for this week is
Stuffed peppers (with rice)
Couscous and vegetables tagine
Leek and potato soup
Falafel and pitta bread
Pizza

I get around the waste issue by making a meal that serves four - if the dc refuse it , they can have scrambled eggs with tomatoes/ corn on the cob, while dh and I eat the meal, I then freeze the extra two portions for dh and I another night or if three of us eat a meal I save the last portion for my lunch the next day. It does mean I'm a bit limited to reheatable food but it works for us.

This week I'm making

  • Peruvian chicken broth with avacado ( from a cookbook)
  • sausage casserole
  • salmon with a broccoli and potato salad with anchovy cream
  • lentil dhal with flatbreads
  • red currant glazed lamb shanks with white bean mash
-mezze- patatas bravas/ croquettes/ meats and bread

I know dd2 will have eggs and tomatoes for at least two of those nights as she's a fussy dolt, and I think dd1 might reject the salmon, but that's life, it'll make a nice lunch for me on Friday.

Pasta can seem boring but really there are so many meals and variety that it doesn't have to be

Pasta chilli, prawns and garlic
Pasta with baked cherry toms mixed with a dash of cream and prawns ( pink pasta my dc call it)
Lasagne- squash and pepper lasagne, chicken and kale lasagne, mushroom lasagne, beef lasagneetc
Fettuccine with wild mushroom sauce
Pasta with cherry toms and basil
Cannelloni- meat or veg
Pasta with minted chicken and peppers
Pasta carbonara
Macaroni cheese- macaroni peas and cheese- macaroni cauliflower cheese- macaroni tomatoes and cheese
Pasta with broccoli and Stilton sauce
Pasta with a slow cooked leek and cream sauce
Pasta with sausage meat meatballs with a cream fennel sauce
Pasta and meatballs with tomato based sauce
Baked anchovy and broccoli pasta
Courgette and fettuccine in cream cheese sauce
Minestrone
Spaghetti Bol - loads more

Seriously pasta is an endless supply of good eating

We're a bit broke after the holiday, so this week is pretty boring.

Today - homemade quiche, jacket spuds, salad
Tomorrow - veggie Shepherd's pie, frozen vege, gravy
Tuesday - veggie sausage casserole with lentils and vege in it, hassleback potatoes
Weds - veggie bolognaise
Thurs - tofu Thai curry
Friday - egg, chips, peas

Omelettes, carrot and cucumber sticks, cherry tomatoes used to go down well when my dds were in fussy phases.

Also,

eggy rice with steamed brocolli or sugar snap peas and a bit of soy sauce

picky meals like falafel, pitta, crudites, hoummus, chunks of cheese

rice noodles with frozen soy beans and some tofu, or omelette strips or cashew nuts for protein

The above are easy to do for dds on days you really fancy an adult meal that they'll turn their noses at!

Making the most of pies while it's still cool enough.
Chicken mushroom and leek with peas broccoli and kale
Chicken curry
Mushroom risotto
Arancini with tomato sauce
Sweetcorn soup
Veggie fritters with Tom sauce

All served with broccoli!

I found myself getting into a rut when I was thinking more about getting veg etc into them than making a delicious meal. So now I make 'unhealthy' stuff that isn't necessarily veg tastic like lasagne (although do add some veg in here) or things with lots of bacon or cheese in but we always have a bowl of broccoli on the table. So I can be more creative with cooking without worrying it's not providing them with enough vits etc.

Thanks everyone, really appreciate the ideas. I like the idea of giving them a set alternative if they don't like the meal (as long as they have a taste). They all love eggs.
Can't often reuse wasted food as they are omnivores and DH is veggie.
I'm also trying to feed up my DS as he's very skinny so have been trying to include high-fat, calorie dense stuff too, which he likes but the others don't usually. Hmm
Am armed with a pad and pen and trying to work out a plan for next week.

I'll lurk for some ideas too. We are in exactly the same situation - Veggie DH, fussy DD and me who eats almost anything.

I have some leftover roast chicken that I need to use up today or tomorrow and also some more diced chicken breast and some salmon fillets.

I'm going to make curry today, the kids haven't particularly liked it before but I'm going to try a korma. They love naan bread so at least I know they'll eat that!
They also love chicken stir fried with sweet chilli sauce, I always chuck some onions and peppers in too, which are stolidly ignored, but at least they are on the plate!

My fussy DD doesn't like Korma but I make the creamy curry from Vicky Bhogal's book with no chilli and she really likes it.

I might make chicken/tofu with noodles for tomorrow night - dd will eat baby corn if no other vegetables.
