Whats the best way to cook it please?

Normally grill it but it does go quite dry.

Was going to do mushroom risotto with smoked haddock topped with poached egg and holandaise sauce for tea

Poach in milk (bring milk to simmer with a bay leaf or two and a few peppercorns). Lower in fish and simmer gently till fish cooked through - about 10-15 mins probably (check). Use milk to make a parsley sauce to go with.

Or, wrap in foil, dotted with butter, and bake in oven at 180degrees till cooked through

in our house, smoked haddock lightly poached in butter and milk with a buttery jacket potato and some spinach is the ultimate comfort food. it's not very glam, but it takes me back to being a wee girl in a flash.
given what you are making i'd just put it in a teeny frying pan, put the smallest amount of milk that you can over it, add butter (optional, obv) and salt and pepper and lightly poach it while you are doing your eggs. if you've got some parsley then fling that in too. the haddie is cooked anyway so you're really just heating it through. it keeps it from going dry and you can use the poaching liquor for your sauce if you fancy.

In a fish pie, poach it, (use poaching liquid to make a white sauce after,) sometimes I add cheese. Chop an onion into it whilst poaching, flake it up. Add creamy mash on top and bake in the oven.

I always poach it in milk and serve with a huge chunk of crusty bread, chips and green salad. yummers!
