Celeriac cooking anyone?

Am a novice with this vegetable....any suggestions for cooking it much appreciated.

I tend to do it roasted - peel, chop into chunks, and then I parboil and roast, normally with potatoes as part of a roast dinner.

Dd likes it mashed - I just do it as i would potato.

I cook it in a Belgian waterzooi. Otherwise it says in the fridge forever ...

It's very good with potato as part of a dauphinoise. (There's a Gary Rhodes recipe which I have.) Also as a mixed mash - again with potatoes. It's also very good in soup with chicken stock. Perhaps with parsnip?

Cut it up thin and fry it or steam it works too.

I was late to the celeriac party (spending much of my 20s thinking of it merely as the ugliest vegetable ever - bit harsh actually) but now I love it!

I had never heard of celeriac until last year Shock

We have it either mashed, roasted or my favourite way which is slicing it very thinly, glazing with garlic butter and grilling to make celeriac crisps.

Mashed with butter and cream topped with toasted pine nuts.
Chips (roasted in oil in the oven)
Or new favourite lovingly referred to as 'celeriac hair' by DP, I use my julienne peeler to make little matchsticks which I roast for about 10 mins turning frequently until crispy and a little bit charred, sprinkled with salt.

Btw I find it doesn't mash by hand well, you just squirt boiling water around and end up with lumps so I cut it fairly small and then blitz in the processor when cooked.

Grate it raw and mix with lemon juice, Mayo and whole grain mustard and chopped parsley. Lovely with grilled fish or meat. Eat it the same day though as it will go watery.

Chop and boil, blend with veg stock and mustard or curry powder for lovely lovely soup.

Mmm love celeriac. Raw definitely my favourite.
Someone cooked salsify on master chef the other night- another underused but incredibly scrumptious vegetable.

Fry an onion in butter on low-med heat until translucent. Chuck in celeriac chopped into chunks, a peeled apple chopped into chunks, and some stock (enough to stop it boiling dry but nowhere near enough to cover or it'll be too watery). When nearly tender throw in a big glug of cream or coconut cream. Blend in processor or with stick blender. Yum.

Or celariac chips - cut into chip-size bits, toss in oil, season, on baking tray at around 190-200 degrees celsius for half an hour or so in the oven.

Oops the mash above needs plenty of pepper too (there should be enough salt in the stock but if not add salt too)

I boil it in skimmed milk, drain and a good pinch of nutmeg and use my stick blender to puree it silky smooth.

Celeriac dauphinoise is delicious with roast pork or pork chops.
I peel and slice thinly, layer into a buttered baking dish and pour in enough milk/cream to just cover. I use half milk, half cream and then scatter grated cheese on the top and bake in a lowish oven for an hour or so until the celeriac is soft.
