Easy impressive menu for pil easter Monday

Hi I'm after ideas for what to cook pil on easter Monday. Busy weekend as have my youngests first birthday party on Saturday, and we are away at my parents on Sunday. So need something I can shove in the oven or slow cooker easily on Monday with little prep as will have both children round my feet and probably a lot of house recovery from first birthday to deal with before they turn up! Any ideas? Thanks!

Pulled pork? Bung it in the oven for 8 hours on 140. Serve with wedges, coleslaw and posh bread.

If you wanted to go really easy I would cook steak and grilled roasted toms on the vine and serve with salad and baby potatoes (or pre made garlic potatoes or have them prepped the night before)

I'm doing Greek lamb -parcel up a leg of lamb in layers of grease proof paper and foil, with whole cloves of garlic, olive oil and coriander) seal up and cook on high for a few hours. I serve with new potatoes. Roasted Mediterranean veg, Greek salad and crusty bread.

Slow cooked lamb shoulder ( Hugh Fearnley Whatsisname does a lovely Merguez Spiced one you should be able to google) - bar a bit of mixing & rubbing in the spices its a doddle. Cook for about 6 hours on low, then serve with salad, pittas & cous cous.

If they're not spicy food lovers, then again a slow cooked lamb shoulder (lots of wine in the bottom to keep moist & cover with foil) served with Dauphinoise pots & simple veg. Buy a pud.

This is my go-to slow roast lamb (Nigel Slater, with a herb rub). I recommend diluting the juices if you want to make gravy, as it can be quite salty, but the dish itself is gorgeous and just sits there cooking for hours and making everyone hungry while you do other things.

Thanks for lovely suggestions - probably should have mentioned they will be having lamb on Sunday so probably can't serve them lamb again. Also father in law is quite old school in his tastes so nothing too spicy for him (boo)

I have all of my family on Easter Sunday. 20+ people ranging from 90 yr old to 6 yr old.
I'm doing a rare beef roast ,posh bread rollsWink, pasta salad, a slow cooked lamb rubbed with Harissa. Boulanger pots,devilled eggs. Crackers & cheeses. Throw together a salad. Do we think that's ok?
