Gluten free people - what are you missing?

Hi

I wondered, for those of you who are gluten-free, are there any foods you cannot get hold of, wish that you could buy? Can you get gluten-free chocolates and do you buy these?

I wish I could buy fresh (not longer-life supermarket) bread ie without calcium carbonate. I bought it online for a while but been too busy.

Are you thinking of gaps in the market for a business? I think mine too random as I worry about nutrition!

Most chocolates are gluten free. I just avoid wafers and biscuit ones.
I do miss bread, but every so often buy a GF loaf: not the same though.

I find GF pretty easy as I cook at home mostly without recourse to jars/processed stuff, much of which has wheat-based thickeners.

The biggest gap I can see- and this is a huge gap- is a 'value' gf range as everything seems three times the cost.
I don't know how possible this is but it would be well received!

Ooh and a luxury fruit cake as this would taste so much more like 'normal' cake than the GF sponge cakes do

Brioche and pastries! The gf version of pain au chocolat was heavy and greasy, and I haven't seen a gf brioche anywhere.

Oh my, do you want a long wish list...here goes...

Re beer, DH has really gotten into cider, he used to go to beer festivals etc. He's a bit wary of gluten free beers. Plus when he was into beer, he had really high standards so thinks they won't taste as good. But craft/artisan ciders are really taking off now and they are a genuine alternative. So are some of the gluten free ginger beers that are out there.

Generally, I'd like to see more things that are gluten free but not so processed (so the things that are full of soy, pea fibre etc really put me off). So things that are made from e.g. chestnut flour. Things that don't try so hard to mimic gluten products but are a genuine alternative- so a cake made with nut (and not just almond) flour. So instead of trying to use 17 different ingredients with chemical compound names, finding a natural alternative. As well as things that are fresh, not with a shelf life of months stuffed full of preservatives.

I would also like to see more gluten free things that are also mindful of other dietary restrictions- dairy, eggs, soya and especially fodmaps. A lot of the people avoiding gluten are avoiding it because it is a fodmap, so seeing things like inulin and pea fibre used instead is really off-putting. So ther eis abit of an untapped market there.

Things that aren't chocolate flavoured would also be good. Genius do some lemon cupcakes which are nice, and it's good to have a sweet thing that isn't chocolate. Similarly there is a honeyrose gluten free banana cake that's pretty decent. Partly because chocolate is a fodmap, partly because actually, it's pretty easy to get gluten free chocolate, it's already a pretty well served area.

And also things that are also organic/free range and gluten free. I was really into organic foods and food quality before I found out about our intolerances and if anything, the food intolerances have just made me more mindful of the quality and origin of food. Some of the gluten free ranges are pretty lowest common denominator when it comes to ingredients.

I'm new to the gluten free life and am also off all sugar, dairy, processed food, meat, fish, eggs, alcohol and caffeine. I really miss chocolate but have started making my own with raw cacao, coconut oil, maple syrup and a bit of nut butter if I'm feeling generous! I also miss the baked goodies like pastry and bread, but the alternatives are either very processed or taste vile.
