Cannot find the one ive used before and cant find anything nice online! I have pumpkin (obviously!) and potatoes and some cream and lots of spices. I remember my last one had ginger cinammon and possibly nutmeg but no yucky leeks or peppers or chillies or any fancy stuff like that!! Does anyone have any recipes along these lines? Please!!

Dice pumkin and potato. Fry onion and celery in butter. Put it all in a large pot with veg stock season with ginger, cumin, cinnamon, nutmeg and honey. Boil until pumpkin and potato are soft. Blend until smooth and serve with a swirl if single cream and hot crusty bread.

Sounds good How much potato compared to pumpkin? And how much honey, just a little dollop to add a hint of flavour or abit more?

Hmm i've just had this predicament and literally just stuffed carrots, pumpkin, potato, onion, celery (don't think this will go but hey ho!) in a pan with melted butter and let it sweat for a bit then added tomato puree, veg stock and coconut milk and seasoned with cumin, coriander and tumeric. I then plan to blend and serve someone tell me this will taste ok!

Be carefull which kind of pumpkin you have too, theer are so many different kinds around at the moment. Last time I got the wrong kind and the soup was so bitter tasting how ever much cream I put in.

ledodgywizardrobespierre · 31/10/2006 14:53

Oh I put a bit of ginger in too.

(from the other pumpkin thread i posted on)
i made soup yesterday from ours: saute onion, add ground turmeric, cumin and coriander, then shove in pumpkin (roasting it first in olive oil, after scooping out seeds makes it taste sweeter but you can just shove it in) and add stock. whizz up with blender and add cream just before serving. add bits when serving (eg cubes of bacon, croutons, garlic mushrooms)

Should I stick some cinamon in it too or will this be too much? Quick answer needed please am about to go on school run.

I did this one yesterday...I had 1/2 a recipe but adapted it to my own requirement to make soup (I find soup making a deeply spiritual process)
OK, take 2 small pumpkins and scoop out the seeds (Roast or bin those) and then scoop (or gouge) out the flesh, put it in a roasting dish drizzle with olive oil and roast at 175c for 30 mins... Save the pumpkin shells for carving into lanterns (if your being a domestic godess)
Dice up a medium onion and 2 medium carrots and sweat them off in some olive oil, don't allow it to brown. When the onions have gone translucent (!) add the roasted pumpkin and sweat that off too. Then add a litre of stock (chicken or veg or both or whatever stock cubes you have kicking round the cupboard) and allow to come to the boil then simmer.
Then pop into the front room and tell ds (3) that you've had some visitors but they've had to pop out for some pepper and squirrel has said he can stir the soup and duck says he can put in a bit of salt. Well it made his day!
I digress
After the soup has bubbled and simmered for about 30 mins (or how long it takes you to wash up the knives etc) blend it smooth (with a hand blender or food processor or blender) return it to the heat to thicken, adjust the seasoning, add some cream if you want and ...tadah, pumpkin (and carrot) soup. If it looks a bit weak and watery add a small diced potato and bubble and simmer for 15 mins then blend, reheat and etc.
Then get someone to send you a text to DS/D/K from cat, squirrel and duck to say thank you for making fab pumpkin soup.
It's tastes great, has the texture of heinz cream of tomato and we're having it before ds's halloween disco.

Well there were so many suggetions so i picked the bits i liked and thought the kids would like and left out the things i didnt like or didnt have. I thought it was lovely but kids wouldnt even touch it! So they had disembodied hands instead (bangers and mash!)

But thankyou all very much
